WIAW Returns

It’s been FOREVER since I did a WIAW post. This is mostly because I couldn’t figure out where the link up went. Here’s this week’s link!

So let’s dive in!

Preworkout/breakfast:

I woke up pretty hungry and had my typical pre workout snack of quick bread. I went with cherry vanilla bread over pumpkin because I cut the slices of the cherry thicker than the pumpkin.

At Crossfit, I worked (I say I and not we because I was the only one at the 7am class!) on double unders and reverse pull ups. My double unders are coming along-they’re still a little hit or miss for me for the WODs and I had so much trouble getting my last rep of the drill! The WOD was a long one. A 17 minute AMRAP of 10 kettle bell swings, 10 burpees, and 100m sprint. I got through 7 rounds + 16 reps. That’s 76 burpees. Yuck.

Post-workout, I had a carton of chocolate soy milk to refuel, while driving to take my car in to get the brakes fixed. Again. From there, I hit up a yoga class with one of my favorite teachers. I’ve started making it to more classes this past month and it’s already making a difference in my creakiness. My foot pain was significantly reduced afterwards too (I think because I stretched out my tight calves). This yoga class is also strangely comforting. I’ve been going to the same class (off and on) for 6 years now, and it hasn’t changed a bit, in the best way! In a time when so much is changing and has changed, it’s nice to have a constant.

After yoga, my mom and I stopped by Whole Foods to get some basic ingredients for dinners and I was starving so I grabbed a few bites of french toast casserole from the hot bar. SO GOOD. It’s made with cinnamon challah, and it’s super custardy.

It’s up for debate whether or not I should be eating wheat/gluten right now (because of the whole damaged stomach lining thing) and while this was delicious, I definitely felt sick afterwards. Darn.

Lunch was leftovers of the quinoa, roasted carrot, and grape bowl the other night. Plus a piece of my mom’s cornmeal crust pizza.

For dessert I had a big spoonful of vanilla fudge ripple frozen yogurt. I’m really liking Stoneyfield’s frozen yogurt. At 120 calories per serving, it’s a healthier option without all the artificial sweeteners.

Speaking of which…snack #1 was a small bowl of mint chocolate Arctic Zero.

I think this flavor has better texture than the vanilla maple. I sort of like Arctic Zero, but it’s definitely not ice cream. It’s essentially flavored water that is frozen. The first ingredient is actually water!

Plus a oat bite. I love Bobo’s oat bars. I highly recommend the peanut butter flavor (which I am allergic to…)!

I spent the afternoon looking up spin music and making a playlist for the class I taught that night.

Snack #2 was a small piece of pumpkin bread. I’m not normally one to snack all day, but it was a pretty active day and dinner wouldn’t be until 8!

I got to spin early (to somewhat beat traffic) so I took my puppy for a short walk. I can’t believe how long her tongue is!

Class went well! I actually found out that afternoon that I will be teaching at my school today (Wednesday) and tomorrow. I was recently hired to teach there, so I’m ecstatic to get started! I was told the students in the classes would be RAs at school for training, so maybe I’ll see some people I know!

Dinner post-spin was basic. There’s really something to be said for basic, simple dinners. A baked potato with Earth Balance (simply because I like the flavor more than butter), broccoli with cheddar, and a scoop of cottage cheese. Plus ketchup for the potato!

Day in the Life: Summer 2015

Hello! I don’t have work today since I’m working Sunday, so I went to a 5:45am spin class this morning. I’m running on about 4.5 hours of sleep and am definitely going to take a nap soon! I wanted to do another day in the life post for while I work my summer job.

6:05am alarm goes off (with a day in the life post reminder)

Then I get ready for Crossfit and packed everything up for the day!

Then, I come downstairs to be greeted by a crazy puppy. Full disclosure-we’re having some behavioral issues right now.

6:45am: leave for Crossfit.

Workout:

Warmup/accessory:

3 rounds- 20 double unders, 8 bent over rows, 100m farmer’s carry with 2 25# plates

WOD:

The original workout called for burpees instead of wall balls but my hip isn’t that great so I subbed wall balls with a shallow squat

We then finished with some ab work.

8am: Clean up and change into scrubs. I’ve never actually gone straight from Crossfit to work before so this part was new for me.

8:15am: Hang out in car, eat, browse blogs.

9am: Start work. It’s a fairly slow day at the vet today.

1-2pm: Lunch break! I don’t normally work 9-6, but it’s one of my favorite schedules because it’s pretty normal. When I start later or earlier, I eat at either 11 or 2/3!

Leftovers: BBQ chicken, coleslaw, mashed sweet potatoes.

I eat lunch in the break room with coworkers and also enjoy a few break room snacks. One of the vets brought in Jamba Juice for us!

6pm: Done with work! I get out right on time today. It’s a pretty dark sky.

I was planning on going to the track, but I get a text from a friend wanting to hang out, so I spend time eating a snack and debating my options.

Plus 2 squares of dark chocolate

6:20 Decide to do a slightly shorter track workout. Regret eating dark chocolate because 2 squares of 72% is a lot of caffeine for me right now!

Track workout was originally 8x400m, but I end up with 5x400m. Given I’ve done 0 speed work lately, that’s good enough for me.

7:10pm: Arrive home, and make myself a quick and easy dinner. I’m not super hungry since I just had a snack, so I make some frozen veggie/potato snacks. One flavor is sweet potato, the other is broccoli. With ketchup. Yes, they are Spongebob shaped.

Then, I shower off all the animals and get ready to go.

8pm: Leave to make the 25 min drive to school where my friends are living for the summer. I arrive around 8:30.

After debating what to do, since I have a car we go to get boba. They realize how small my car actually is. It’s actually kind of ridiculous.

I ended up getting Rose-Aloe tea. I think it was rose tea with chunks of gelatinous aloe? I would have preferred pearls, but I actually had no clue what I was ordering-all I cared was that it was decaf, and my friend got this and knew it was decaf!

Around 10, we head back to campus and meet up with my other 2 friends. I stay there until around midnight, and am in bed by about 12:30! If I had work the next day, I definitely would not have been out so late!

What is your typical day like?

Salsa-ing Around All Day

Hey guys! WHEW. I swear this is the first free minute I’ve had all day-I’ve been running around like crazy since 7am! 

The morning began by teaching weight lifting to quidditch. The only bad thing was that right now we have 2 days they can come, and only 3 people showed up today, which means tomorrow may be kinda crazy. The focus today was upper body and core-the main lift was push presses. I doubt they’ll be as sore as last week! I also taught them forrest rowing form for the conditioning portion of the workout. 

After that, I rushed out to squeeze in a run. Fun fact-I’ve never actually done a tempo run before! It’s been on the schedule but it just never happened. I was planning on a 4 mile loop, with 2 miles at 8:00 in the middle. However, things don’t always go as planned. My legs felt heavy at the start, and when I tried to speed it up after the first mile, it just wasn’t happening. I ended up up waiting about .8 miles more when it was completely flat/slightly downhill (instead of slightly uphill) and just do a mile of tempo, since it is my first tempo run, after all. I was able to hold pace and felt pretty good! Things don’t always go as planned, but we have to adjust! My pace was so much better on the part after the tempo run though-interesting. While my heels felt pretty good, the ball of my foot went numb and hurt and it kind of felt like I had bricks attached to my feet….

By the time I got back, I had zero time. Breakfast was prepared the night before-yay for overnight oats!

I made them with raspberry goat milk yogurt-it’s interesting, I could really taste the goat-y-ness. (In a good way-it had that creamy tang of goat cheese.)

And then rushed to class. With zero time-nothing like being late to class to motivate you to bike insanely fast!

Straight after class, I ate my packed lunch and got some studying in.

Yay for leftovers! Leftover egg salad, leftover cucumbers and whipped cream cheese. Our mayonnaise that we made the egg salad with is actually super fancy-it’s “spooning” mayonnaise. I’m pretty sure someone would have to pay me a whole lot of money to convince me to eat mayonnaise with a spoon-but we had to get it because my roommate is allergic to canola oil, and the non-canola oil options were limited. 

I also thawed out some more mashed sweet potatoes, and added them at lunchtime.

Then it was off to class-and immediately after class I had to rush to my home gym to do one last spin workout on their bikes-the bikes at school are a little weird and I wanted to practice my playlist at least once on them before I cancel my gym membership. If you’re keeping count, that’s 4 times I’ve practiced this same playlist in the last week. 4 hours of spin, plus biking a ton (an especially large amount thanks to a broken car), after not biking around for a few weeks means my rear end is pretty much shot. 

And I have to say, while I didn’t hate it the last time, I definitely liked the playlist more the first time!

After Spin, my car’s engine sounded weird and the check engine light came back on-so it looks like I’m going to be without a car for the second time in as many weeks!

Back in my room, I threw together a super fast dinner from the fridge-more leftover egg salad, plus tomato soup with tons of cheddar.

Everything was consumed super fast-then I had to tune my violin. It was remarkably not terrible after sitting in a closet for 3 years! But I wanted the embarrassment of how out of tune it was to be in the safety of my dorm room, not in front of a whole bunch of musicians.

Mariachi was super fun! I’m definitely rusty on the violin, but it wasn’t terrible. It was kind of frustrating because the difficulty of the songs I used to play was much higher than this music, yet my fingers/brain connection is just not there yet! The whole class is conducted in Spanish-another thing it’s been a couple of years since I’ve done! While I didn’t understand everything, I understood enough, and I’m really excited to be speaking it again. 

And that brings us to now-the few minutes I have before going to my sorority meeting. While it was a packed day, it was also a good one. And while I could definitely use more sleep, I’m managing. 

One thing there was a question about, which I totally forgot to mention-my project will begin next Monday. I want to to plan/prepare/shop. And I need to look into buying blood glucose tests, and if that’s reasonable, or how much I can actually tell from that.

Crazy days-love them or hate them?

WIAW-Meal Prep Edition

Happy WIAW! As always, a giant thanks to Jenn for hosting this weekly party!

Since starting 12 Days of Christmas, I haven’t gotten to talk about my day to day eats in a while, so let’s dive in, shall we?

The most exciting thing I did before returning to college? Meal prep! I wanted something veggie packed and easy to grab and go, so I made a TON of egg cups-they’re filled with egg, chopped kale or spinach, and cheese-some gouda, some parmesan.

I also made one with cranberry sauce and turkey, if you’re wondering. 

I wanted quick grab and go sweet breakfasts as well, so I made mini versions with egg and blueberries, plus a little cinnamon. The most genius thing I did though was mix up some of my pumpkin starter with egg, and top with cinnamon cream cheese. YUM.

I also made a few with fig balsamic and goat cheese (the bottom ones).

I made an extra batch to freeze as well, since everything was already out! I used the pumpkin starter again but added blueberries.

I’ve also been eating a lot of leftover butternut squash soup, from Thanksgiving. SO GOOD. I top it with cranberry relish and creme fraiche.

Another use of leftovers? On my last night home, we used turkey to make quesadillas with jack cheese, spinach, and mushrooms.

My roommate is seriously the best. She brought back an entire crate of fruit from her trees at home, and it’s like 3 layers deep in persimmons.

Obviously, those have been kind of a staple in my diet lately.

Additionally, the giant plate of asparagus at lunch has returned-I topped them with a fresh herb seasoning mixture, and then nutritional yeast. Plus my turkey egg cup.
