On the Tenth Day of Christmas, My True Love Gave to Me…

10 best things I ate in the past year.

This is arguably my favorite post I do for 12 Days of Christmas. So here’s a peak at the best things from the past year!

1. This raspberry pastry thing from the Danish Christmas town, Solvang. It was sort of like a fancier, better, moister pop tart.

2. Chocolate ice cream from Tin Pot. This is my absolute favorite ice cream, and I’m pretty sure it’ll make the list every year.

3. Nutella-filled chocolate chip cookies with sea salt. My roommate made these right before winter break and they were AMAZING. (Note-this is before I started avoiding nuts 100%.) Picture perfect chocolate chips cookies, and then stick nutella in the middle. And the sea salt on top? Perfect.

4. Guacamole from the restaurant Reposado in downtown Palo Alto. It was amazing. I think it may have had cheese mashed in?

5. Salmon from fancy restaurants in DC. My parents came to help me move in and get settled, and we went to a couple of nice places, one of which was in our hotel. Both were delicious!

6. Guacamole greens salad from Sweetgreen. The amount of times I had this over the summer was ridiculous. The salad was fabulous though-it tasted just like fresh guacamole!

7. Maryland crab cake at the Nationals ballpark. I have rarely had crab cakes, but my grandma insisted I needed to have something with Maryland crab while I was over there. When it was my last weekend and I still hadn’t had any, I opted to get a crab cake at the ballpark, and I’m so glad I did! Phenomenal! I may be a crab cake person now.

8. Arepa from a place at the Oxbow market in Napa. The place was featured on Diners, Drive-Ins, and Dives, and I can see why! This sweet corn arepa had tofu, platains, avocado, cheese, and black beans.

9. Pumpkin soup at Thanksgiving in Napa. Last year, butternut squash soup was on the list. Now-I think I’ve moved on! I can’t wait to make this over break.

10. Sibby’s cupcakes. Honestly, I think this place deserves its own post. After searching all over DC for the best cupcake, I found it was right under my nose, 10 minutes from my hometown. I have nothing but amazing things to say about these cupcakes.

WIAW on Stormy Days

Happy Wednesday! (Feel free to ignore the fact that I’m posting Tuesday night. You get the idea.) As usual, I’m celebrating WIAW with Jenn!

I have lots of good things to share, including a recipe! Yay!

Before I get to food, let’s talk about workouts. I was all set to go to Crossfit after work Monday, but I walked outside to a giant storm, and then the Metro stopped running, so I missed the class, and didn’t feel like going to the late class.

Anyways, this meant Monday was rest and today was a 3 miler! After pouring all afternoon, I decided to take a chance and go for it during a break in the rain. I did my usual 3 mile route.

Yes, the Washington Monument is EXACTLY 1.5 miles away, so it should be pretty clear why this is my typical route now!

On the way back, storm clouds began to threaten. It started POURING right as I was running up my block. Talk about lucky!

The run also felt fantastic. I was running on rested and not “just woke up and it’s 6am” legs, plus I’m been working hard in my training, and it’s certainly paying off. This is week 3, and each week I’ve done this route. I’ve done it faster each week, and each week it feels better. Week 1 was super slow for me-10:18 pace. sat week was 9:48, and today was 9:29. And it wasn’t like it was an all out pace, so it’s a good start!

Now onto the part everyone actually cares about. Food.

Breakfasts have been the same old-sunflower seed butter with lots of fruit! Plus chai tea since I’m laying off the coffee.

Lunch Monday was leftovers of Cheesy Mushroom Quinoa plus some yogurt.

Lunch on Tuesday was extra special. I was on trip at work, and the food they prepared us was amazing and beautiful.

I’m not sure how much I should talk about work on here, but I will say this gives me so much hope for the future of America’s school food system!

I piled my plate high with all kinds of delicious salads. One of my favorites was a ginger root salad. This is the first context in which I’ve actually enjoyed beets!

I also got to take leftovers home with me, which made a great pre-run snack/dinner.

And finally-for the recipe!

Coconut Flour Arepas

*Edited to add: this is based on the fantastic Blogilates recipe for healthy quesadillas!

Ingredients

2 T coconut flour

1 ear of corn

2 T water

6 T egg whites

1/8 t baking powder

salt to taste

Directions

1. Mix together coconut flour, water, egg whites, and baking powder in a small bowl.

2. Remove the corn from the cob, and add to mixture.

3. If mixture is too thin, let it sit a moment. The coconut flour may take a bit of time to absorb the water, but this will still be fairly runny. Add salt if desired.

4. In a large pan, add a touch of olive oil and heat the pan.

5. Once pan is hot, pour mixture into pan.

6. When bubbles begin to form on the surface, flip and cook through.

7. If desired, sprinkle with salt, and fill with desired fillings. I used smoked gouda.

Delicious, and comes together in minutes!

What is your favorite type of cheese?

Not for everything, but I love goat brie. If you haven’t tried it, you absolutely need to!

 

Thanksgiving Eve

If you’re reading this on Thanksgiving, then Happy Thanksgiving! I wanted to pop in quickly to share some eats from Thanksgiving Eve (it’s currently Wednesday night). 

Today was our last day in Napa. We decided to go out for a nice breakfast at the hotel restaurant. I ordered fruit with yogurt, which was of course delicious.

What really stole the show was the Belgian waffle. Can you believe I hadn’t had a waffle in months? I haven’t had one at school yet-it used to be a weekly thing! My closest dining hall doesn’t have frozen blueberries to top it with (so totally not worth it) and the lines at the other dining hall WITH the berries are insane, so that’s not happening. But this little guy was fantastic! My family ordered one for the table to share.

On our way into downtown, we made a stop at Whole Foods-the granola bar I wanted to eat before my Turkey Trot is no longer carried by my local Whole Foods-sadly we struck out in Napa as well so I’m going into the race on an untested breakfast (YOLO). However, we did see that this Whole Foods had a coffee bar, and decided it would probably be a good idea to test it out.

A cappuccino-of course. I also tried some of my mom’s Pumpkin Spice Caramel latte, and I actually really liked it! I normally can’t do sweet coffee, but this wasn’t too sweet (ok, or that coffee-y). Maybe next time!

After walking around downtown, we stopped in an interesting marketplace for lunch. We decided on a Venezuelan place, and each ordered an arepa.

It should be no surprise that mine had avocado! It also had tofu, plaintain, black bean, and garlic aioli, all on a sweet corn “bun.” Delish!

And since we were in a marketplace, there were plenty of dessert options. I had a pumpkin pie cupcake-it was filled with caramel! I probably could have done without the buttery icing though!

And on our way out, we stopped at an Italian bakery for what were more or less cream puffs-mine was milk and honey.

Dinner later was a new to me flavor of kombucha, plus broccoli and an omelet with mushrooms, spinach, and gouda.

And of course, I’m enjoying plenty of love from this guy.

Now, I’m off to hopefully fall asleep and dream of trotting turkeys! I have my playlist made (which may or may not be half Christmas music), my clothes laid out, and my alarm set! Now I just need to get sleepy…maybe I’ll go read my textbook for school-that should do the trick! Yayy finals in a week.
