First Day in California

Hey guys! Today was my first day back in California so I thought I’d share my meals.

Breakfast:

I woke up 6am after 6 hours of sleep, thanks to a touch of jet lag. My stomach is still on central time!

img_0674

I ordered a whole bunch of Flapjacked muffins and they actually beat me home! They arrived within like 3 days of shipping. Double chocolate is my favorite. I swear it’s like lava cake if you uncool it a little (and there are no eggs so no worries about that!)

I spent the morning running errands with my mom (which included a trip 2 Old Navy and 2 groceries). My grandma is coming into town today so there was lots to prepare!

Lunch:

img_0675

My mom made crockpot lemon chicken rice soup a little while ago and thawed some out. I ate that with added spinach and feta. Avocado toast on the side, with Trader Joe’s Everyday seasoning blend.

Snack:

img_0676

I saw someone on Instagram post about this company’s new sunbutter, so I checked them out. When I saw they had GF nut free bars, of course I had to try them out. The base of these bars is a seed blend of pumpkin, sunflower, and flax seeds. I ordered 2 flavors: chocolate and sea salt and apple ginger. It’s a smaller company, and I actually got a handwritten note which I thought was a really nice touch.

img_0677

This was really, really good. It was chewy and had the perfect amount of salty. I will definitely order these again. It’s always nice finding new bar options other than just Luna bars!

img_0678

I also had a couple of pieces of crystallized ginger.

Workout:

I went to my home Crossfit, the one where I first started Crossfit. I haven’t been too much lately, but this time I’m here for the long haul! For strength, apparently we’re doing endurance in preparation for the Crossfit Open, so we did one set of 20 back squats at 60%. Yuck. Yuck yuck yuck. I hate long sets. I used to think 10 was long…I was panting by the end of the set. We then did strict press for a set of 20.

I’m really proud of how I did during the WOD. I Rxed it, and it’s not one I could have Rxed a few months ago.

50 double unders

30 pull ups

30 wall balls

50 double unders

I knew right away that the pull ups would be my slow point here. I started doing sets of 5 kipping but ended up breaking it up even smaller as I went through. The pull up bars here were sort of hard to hold on to, so that made things more difficult.

One of my biggest downfalls for double unders is having tired arms. When my arms are tired, my double unders go. So coming off pull ups and wall balls wasn’t fun. I finished in 7:28. I was the last one to finish, but not by a lot, which I’m proud of!

Dinner:

My mom and I were on our own tonight, so we made one of our favorites, an open faced turkey and havarti sandwich.

img_0679

This sandwich was from a cookbook that we first made years ago. It’s mayo+dijon, grated Havarti cheese, red onion, arugula (we used spinach though), turkey, apple, and ground pepper. The whole thing is put in to broil until the cheese is bubbly. We got the Havarti from Trader Joe’s and it was actually pretty different. It was softer and creamier. It was good! On the side, we roasted shaved brussels sprouts with a touch of oil, garlic, and pepper, and then added truffle salt when it came out of the oven. SO good.

img_0680

For dessert, I had a piece of gluten free orange cranberry bread. It’s not “healthy” bread, but it’s delicious and that’s good enough for me, especially for dessert!

Here’s the recipe.

img_0681

Plus a few milk chocolate chips.

I hope everyone is having a great short week leading up to the big holiday!

All the Goodbyes

Hi friends! I’m blogging from my bed in California now! I am officially home for Thanksgiving!

I wanted to pop in and share a little bit from my very last day in St. Louis.

img_0604 img_0606

What a freaking goof.

The cold came in Friday night, so I bundled up for Crossfit. My last one! Thankfully, the gym is heated. For the workout, we worked on hang cleans. The WOD was killer on the shoulders.

10 rounds:

10 push press (65 lb)

10 UNBROKEN double unders

10 weighted sit ups (25 lb)

I knew right away the push presses would be the hard part of this since 65 is a little heavy for me for a WOD. It was. Ouch. For the double unders, if they were broken (aka you messed up) you had to start over. Surprisingly, I only did this one set. It was a good workout to end on, and I said my goodbyes.

I went straight from Crossfit to The Mud House, a coffeeshop I visited once before, for some food and study time.

img_0607 img_0608

Kombucha and cheddar chive grits. Why are grits more of a thing in California??

The place was absolutely packed for brunch, but I was able to snag a spot at the counter. But the line was smooched up against the counter, so I felt especially awkward pulling up my anthrax research for microbio.

I didn’t do too much that afternoon other than squeeze in some last kittie snuggles.

img_0609 img_0610

Around dinnertime, I bundled up for one final outing.

img_0613

Me and a couple of zoo buddies went to Seoul Taco in the loop. I had my last chocolate milk stout.

img_0614

Plus a bowl with chicken and a very jiggly egg.

img_0615

Next was our main event on the agenda, visiting Garden Glow at the Missouri Botanical Gardens. It was a big light display set up in the gardens, and I was really excited to see it! With lows in the 20s and wind, I was nervous for the weather. I finally made use of my winter coat, and the temperatures were only low 40s so it wasn’t too bad! Check out the lights though:

img_0617 img_0618 img_0619 img_0631 img_0633img_0635 img_0637 img_0638 img_0642 img_0644 img_0657

I had such a great time, and it was a great way to welcome the holiday season.

Afterwards, we stopped at The Cup in Central West End to pick up cupcakes. They had 3 GF options! I got a chocolate cupcake with vanilla ice cream and it was SUPER delicious and fudgy.

img_0651

We ate these while watching Insidious 2 back at my place, and Scooby kept us company (and Yoyo wandered around making sure to creak every floorboard in the dark old house!)

img_0652

And then it was time to say goodbye. I’m really going to miss these people. It’s amazing the relationships you can form in 3 short months. I can’t bear to get to sappy here, but I’ll leave it by saying it’s not goodbye forever, because I WILL come visit.

img_0656

Sunday morning I woke up to this:

img_0658

29, feels like 25. Yeah. I decided my run could wait until the “feels like” was at least above freezing. What did I do instead?

img_0660 img_0662 img_0663

Finally I got out the door and did my normal 3 mile route. I had planned on running in Forest Park but didn’t want to spend the time driving there.

img_0664

And then finally I said goodbye.

img_0670

But with every goodbye comes a hello.

img_0673

Oh, and I had my first cranberry orange bread of the season. This had warm spices which made it feel extra holiday-y.

img_0672

As hard as it is to leave, I try to look forward as much as possible, because I’ve enjoyed my life at every stage lately and know that I will be just fine. (That doesn’t mean leaving people in the past though!)

How do you say goodbye?

Last Day At The Zoo

Hi friends. It’s Friday night and I’m cuddling with Scooby in my bed while listening to the crazy wind outside.

img_0600

The weather here is crazy. Get this: yesterday: highs of about 80. No jacket weather. Hot. This morning: similar. About 70 degrees. The rain started and it was warm. One hour later, the temperature dropped 10 degrees. And has been dropping steadily since. Lows for tomorrow are in the 20s. What?? I don’t understand crazy St. Louis weather.

This morning goodbyes continued at Crossfit. The workout today was a great one though. We did 5 sets of 5 deadlifts at 65%, and I used 155 lbs. Then the WOD was a partner “double Jackie,” which equated to 2000m row, 100 thrusters (35#), 60 pull ups split between 2 people. The coach matched us up, and I was paired with another coach. So I knew it was legit. We switched every 250m for the row, every 10 for the thrusters, and every 5 for the pull ups. I knew the pull ups were definitely going to be the hardest for me. I can’t really do more than a set of 5 for lots of reps, and my only rest time between sets was while my partner did her 5. So there was very little rest. The last few sets were tough! I already feel things in my shoulders.

Because it was so warm, I was strangely craving a protein smoothie afterwards. It went along well with my plan of using everything up, so I went with it!

img_0555

Frozen banana, cocoa powder, milk, Quest salted caramel protein. Plus some snap pea crisps on the side. I’m a little obsessed and have then any time of day.

This morning I had to say goodbye to this goober:

img_0558

He was being especially playful this morning. He started by tossing his rawhide bone around the pool, and then came right up to the glass and interacted with this kids.

img_0559

img_0563img_0565

What a goof.

I love the sights and decorations around the zoo.

img_0569

img_0580

I especially love the gumdrops.

Today it was supposed to rain, and I almost made it without getting wet. I just hate wet feet. I brought 2 pairs of extra socks to change throughout the day. My feet got super wet coming back from these guys:

img_0574img_0578

Here’s Saka and Makini looking like they felt just about how I did about the rain:

img_0582

Lunch:

Quest chips for protein and a salad with pear, goat cheese, and Newman’s Lite Balsamic.

img_0584

And before I knew it, I was at my last observation. I was FREEZING. The temperatures had dropped quite a bit, and with wet feet I stood no chance. I had dry socks, but those only get you so far with wet shoes…

img_0590 img_0591

After work, I went to Whole Foods for dinner+productivity. I majorly struck out with the hot bar. All the delicious looking things either had wheat or tree nuts, so I ended up with 3 forms of potato. Not the end of the world though. Anything you can douse in ketchup, right? I also had some mango kombucha.

img_0596

After eating, I pulled out my laptop and got some work done on my Microbiology class. While doing that, I noticed an add on my table for 4 Hands Stout. I went to 4 Hands on the Brewery Tour and have been loving their Chocolate Milk Stout ever since. Well, the add was for some of their seasonal flavors, Gingerbread Stout and S’mores Stout. What?? As it turns out, this Whole Foods had quite a selection of beer on draft. Right??

So naturally, I had to give it a try. With that discovery, my night of studying got a whole lot more interesting.

I ordered a Gingerbread Stout.

img_0597

It was delicious. To be honest, not really sure I got the Gingerbread flavor, but it was great stout. Maybe a little milder than the Chocolate Milk?

I spent an hour or so sipping that and doing homework before picking up a treat to take home and eat in front of Netflix, cozied up with a kitty.

img_0598

Honestly, this is all I wanted for this night. A coworker invited me to a speakeasy downtown, which sounded like a ton of fun, but after freezing my butt off all afternoon and with rapidly dropping temperatures and crazy wind, I did not particularly want to venture outside again!

Wish me luck as I brave the cold tomorrow!

I Really Hate Leaving

I know everyone keeps saying what a terrible year 2016 was, and while from general world perspective, I might agree. However, for me personally, it’s been a pretty great year.

I was worried that I wouldn’t do anything meaningful for my gap year, but instead, I couldn’t have wanted anything more thus far.

I’ve done a lot this past year. Graduated college. Moved to Tennessee for the summer. Moved to St. Louis for the fall. These have all been absolutely amazing things and experiences. But you know what it means? Lots of leaving. Lots of goodbyes. Lots of friendships and attachments made. That’s all I could ask for in life, but it makes leaving so hard.

img_0064

#zoocrew

So here we are, just a few days from leaving again, and the goodbyes have begun.

img_0550

Today I said goodbye to the handsomest gorilla ever, Jontu.

I’m trying to squeeze in some last bits of time with these people. Last night, the interns and I went line dancing. Let’s not pretend I can dance, to be clear. But I do know a lot of country music after living in TN!

img_0518 img_0519

I know I can’t dance, but I did give it a try! I’m thankfully at the point in my life where I don’t care too much what others think of me. Plus there’s the fact that I’m moving across the country in 3 days and theres 0 chance of seeing anyone again!

In other exciting life news, I saw the bat eared foxes at the zoo yesterday! I walk past their habitat at least 3 times a day. Every day. For the past 3 months. They are NEVER out! Finally, on my last week, I saw them! SO exciting!

img_0493

I also went into the antelope house for they first time, and saw baby gazelles, as well as a kangaroo in a pouch!

img_0475 img_0476 img_0479 img_0485

And since we’re on the topic of zoo pictures, here’s baby Ginger:

img_0503 img_0506

Anyways. I’m definitely sad to leave. But also excited for what’s to come. Seeing my pets. Celebrating the holidays. I’m getting pumped for Blogmas, which will be a post a day Dec 1-25, full of interesting content: recipes, workouts, chats about health during the holidays. I have some recipe ideas that I cannot wait to try out. I love blogging this time of year and doing special things, like my 12 days of Christmas in years past. This is the first time in a while I’ll have time to really put some work in. To be completely honest, I don’t know next year will be like for this blog, so I’m trying to do what I can and enjoy it now!

To be honest, I’m also a little nervous about being home and the holidays and health. Every year during the holidays I end up going crazy on sweets, feeling gross, and therefore getting worked up. Except for last year. Last year, with my chronic stomach condition, I was too sick to rally overindulge. We had Christmas dinner in soup form, for crying out loud! Honestly, gaining weight over the holidays doesn’t worry me. What I really want to do is feel good during the holidays. Stay sane, stay happy. So that’s something we’ll be chatting about a little bit during Blogmas!

In terms of recent eats, I’ve actually shaken up breakfasts lately.

img_0453

Greek yogurt with maple syrup and sunbutter.

img_0521

Oatmeal with blueberries, cherries, and white chocolate chips. I added some sunbutter and a drizzle of maple syrup, and had cherries on the side. I actually really don’t like having oatmeal for breakfast. I hate how it makes me feel. I need fewer carbs and more protein, which is why I love yogurt! I found myself craving lots of carbs all day as a result. But I’m trying to eat all the food that I bought and has been sitting in the pantry.

Dinners have also been an exercise in cleaning out the fridge and freezer. That being said, I really hope my dinners are an example of how healthy can be quick and simple. My meals come together in about 15 minutes tops.

img_0516

Spinach patty with ketchup, polenta with parmesan, and spinach and mushrooms sautéed with garlic and soy sauce.

img_0552

I’ve gotten really into eggs and avocado toast lately. I could have an egg, avocado toast, and a veggie for every meal and I’d be happy. The veggies of the day was a salad with Bolthouse Farms honey mustard and Mexican blend cheese. I don’t quite know how I feel about honey mustard dressing. I never know what to put in salads with it. I feel like you need something salty to counteract the sweet, so I went with cheese.

WIAW- St. Louis Classic

Happy Wednesday! We’re going to do a WIAW for my last Tuesday in St. Louis! Thanks as always to Jenn.

WIAWbutton

Breakfast:

A few snap pea crisps. I often grab a couple of these before meals while I prep my food.

img_0428

Then I had a flapjacked muffin (double chocolate, the best flavor) with blueberries.

img_0429

I got a little bit of a late start to the day because I wanted to watch a short Netflix episode on the couch, and before I knew it I was trapped under 2 kitties.

img_0430 img_0434

Finally I was on my way to Blueprint for a little victory lap. After 3 months of intense research, I have determined that Blueprint has the best coffee in St. Louis.

img_0439

Across the street, there was an international foods store. I popped in to look around and came out with a few interesting looking bars.

Pre-lunch snack:

1 of the 3 thin bars

img_0440

Lunch:

Half Panera (St. Louis Bread Co. here) Fuji Apple Chicken salad with Vans Say Cheese GF crackers.

Snack:

A piece of the other new bar I got (it’s basically just dried apple covered in chocolate)

img_0442

And a Luna

img_0443

My workout for the day was Crossfit. We found our 3 rep max front squat, and I finished at 145. I don’t think i’ve done a 3 rep before but I predicted I would be around 145! The WOD was 15 Min AMRAP of 15 burpees, 10 ring dips (I used a band) and 5 shoulder to overhead (I did 75 lb push presses). I finished just under 5 rounds.

Funny story….yesterday’s WOD was 3 rounds of 50 double unders, 15 kb swings, 50 doubles, 5 power cleans. That’s a ton of double unders….In the middle of my second round of double unders, and I looked down and saw blood running down my thigh. I thought, “Wow, I can’t believe I whipped myself hard enough to draw blood?” But it turned out that my rope has exposed sharp wire at the bottom and it may be time for a new rope….

img_0419

Dinner:

img_0446

I apologize for the terrible lighting. I had avocado toast, a Dr. Praeger’s super greens frozen patty (with ketchup), and then on the side, I sautéed up some mushrooms and spinach with garlic, soy sauce, and coriander.

Dessert:

img_0447

I FINALLY got to try this St. Louis classic. This is my second time having gluten since not eating it anymore thanks to a chronic stomach condition. But I HAD to try this St. Louis classic before I left. According to Wikipedia: “Gooey butter cake is a type of cake traditionally made in the American Midwest city of St. Louis. Gooey butter cake is a flat and dense cake made with wheat cake flourbuttersugar, and eggs, typically near an inch tall, and dusted with powdered sugar.”

Ii picked up my piece from Park Avenue Coffee, which is supposed to be one of the best places to get it (featured on Food Network!). They have an insane number of flavors, but I had to go with the classic. (Also apparently you can order these online to be shipped anywhere, and there’s a box you can check that’s GF?)

Because I’m a scaredy cat and not trying to die, I just had a corner of it.

img_0448

Guys this was SO delicious. I don’t even know how to describe it. Sort of like a combination between a sugar cookie and vanilla cake?

(I actually went back later and had most of the rest of the piece!)

Since I only had a little (initially) I had a snack a little later of a piece of a lemon poppyseed oat bar and a Yasso salted caramel froyo bar.

img_0450 img_0451

That’s it for the day! Here’s a picture of Yoyo, ensuring that he will always be around my neck (he likes to sleep on my neck) even after St. Louis, by sitting on my scarf.

img_0420

Is there a food your area is known for?
