MIMM-“Ski” Trip

Happy Monday! How are you guys doing? I have to day off today for MLK day, so I’m currently at home doing food prep for the start of The Project!

Over the weekend, I went to Lake Tahoe with my dorm for our ski trip. I use the term “ski trip” a bit liberally-not many people skied-there’s hardly any snow right now! We are officially in a drought. It meant the weather was nice though!

Friday before we left, I got in a great workout-I did my treadmill workout, followed by some weights-back lunges, single leg RDLs, and abs. Basically all my favorites! My knee is still not fabulous, so it limits what I can do a little bit. On the plus side, this means I’ve been running more, which I really should do anyway since I claim I’m trying to PR a 5k soon. 

We left school in the afternoon, and hit horrible traffic. We stopped for dinner-and there was a Safeway nearby! Not just fast-food!

I also got some 86% chocolate for the bus ride. 

I have to warn you guys-not a lot of food pictures from this trip. Or a lot of good food. The food they provided us was basically carbs and sugar. And lots and lots of potato chips. Mmmm and blueberry muffins-definitely a weakness of mine!

The most Marvelous part of my weekend was probably Saturday’s run. Not skiing meant I basically had all day to hang out and do whatever. I was excited to run in a new and beautiful place! I bundled up (sort of) and got going on my first snow run!

It was definitely not as cold as I was expecting, especially given there was some snow on the ground. I’ve had much colder runs at home!

I ran through the little ski village, taking a comfortable pace. I wore my Garmin just so I would have some idea of how far I had gone (so I wouldn’t get too lost) ad just listened to the sound of my breathing and my footsteps. I didn’t really have any destination in mind. I ended up in another state, which was cool.

I somehow ended up finding a trail that took me through a forest/wildlife preserve area. I stopped a bunch for pictures, and to read some of the signs-there were a bunch that talked about casinos that were supposed to be built there (definitely not in CA anymore), but how the space was preserved instead.

One of the best moments of my run was finding a pond that was completely frozen over.

I have a strange obsession with finding frozen puddles (maybe because I never see them) so this was pretty exciting!

I was tentatively planning on running 4-5 miles. I wanted to get a glimpse of the lake, so around the halfway point, I decided to go a little bit further to try and get a picture. That was a good decision-I turned a corner and BOOM. I was on the beach!

That was one of my favorite runs in a long time! I didn’t really feel the high altitude either!

I spent the rest of the day walking around and exploring the little village.

Like I said, food was not the best quality on this trip, and I definitely ate so much junk! This was actually one of my healthier things (and I felt the need to document it!)

For dinner, we had frozen pizzas to cook up (we were staying in suites with a small kitchen)-this was an interesting task, as the pizzas had thawed a bit and were floppy, and there were no trays or anything. One of the pizzas ended up as a calzone because there was no other way to get it into the oven!

Sunday morning we were up fairly early to head home-we left early enough to get back in time for the 49ers game!

Upon arriving at school, I packed my things up super fast to head home in time for the game. It was disappointing, to say the least. And I’m kind of embarrassed I go to the same school as Sherman did…

Dinner was Greek salads with grilled chicken-we grilled up a ton extra for food this week-enough that some will have to go in the freezer!

And now, I’m finishing up meal prep. I’ll do a post on this as well as other “project” food later tonight! Before I head back to school, I’m going to get a Crossfit style track workout in-I can’t do the Crossfit workout today thanks to my knee-squats are still a no go!

WIAW-A New Quarter

WHEW, happy Wednesday! Can you believe it’s only Wednesday? (Well, tomorrow for me-I’m typing this up Tuesday night.) I’ve been saving up the last couple of days of food photos for…What I Ate Wednesday! Thanks as always to Jenn for helping us celebrate our new favorite day of the week!

Let’s start with my last meal at home-vegetable soup with cornbread!

Does anyone else eat their cornbread with honey? So good!

On Monday, I started my “meal plan.” Just to clarify, but “meal plan,” I really mean meal planning. It’s not so much only eating certain foods as it is getting into a routine and making my meals the night before, so when I running out the door with a minute before class starts, I have something good to grab!

After Monday’s Spin+Run, I wasn’t super hungry but knew I needed fuel and would be super hungry later in the day if I didn’t force myself to eat a decent amount. Here is a giant bowl of overnight oats-I used Julie‘s recipe, which is 3/4 c oats (which happens to be one packet of instant), 1/2 c unsweetened vanilla almond milk, a tablespoon of chia seeds, and a container of yogurt. For this particular meal, I used mango chobani.

After my one class on Monday, I ate my packed lunch in the sunshine (sorry East Coasters)-prepared over the weekend at home. Greek seasoned chicken, sage-brown butter mashed yams, and Garlic Balsamic Roasted Brussels Sprouts

This was perfect-it’s great to have well seasoned food at school!

For a pre workout snack, I ate some dried persimmons, made and brought to me by my wonderful roommate.

I also had a slice of chocolate chip banana bread, another item prepared over break.

For my new quarter eating schedule, I’m a little unsure of whether or not I should eat snacks. I know it’s totally counterintuitive to most people to skip snacks, but more often than not, snacks mess up my stomach really badly-it doesn’t seem to matter what the snack is! A few minutes after Monday’s snack, my stomach was twisted in knots. 

But I guess it’s really hit or miss-on Tuesday I had 2 snacks without issue, and was hungry enough that I felt they were the right decision. Our bodies our so complicated!

Monday night, I also had my first dining hall meal of the quarter. It wasn’t a bad one-they had 2 different types of brussels sprouts!

Besides brussels sprouts, I stuck to my basic formula of a carbohydrate and a protein-brown rice and cod. 

And for dessert, I threw half a chocolate chip cookie dough Quest bar in the microwave.

This is kind of ironic given I recently purchased a couple of Quest bars for after dinner treats (because yay chocolate!), but today I found this article. It talks about the nutritional merits of Quest bars. I don’t really know what to think of them. I’m sort of against them because a)I don’t like the taste of stevia and b) they sometimes give me stomach aches. But sometimes I crave them. I guess what bothers me is that they are touted as a super natural protein bar, yet I have never heard of half the ingredients, and would never be able to buy half the raw ingredients in a store. But who knows. I’m also a little suspicious of stevia, just because there has been so little research on it. But I don’t know-to each his own!

Tuesday morning I was up bright and early-I had to be at the gym at 7 to train the school quidditch team! I’m leading weight training for them, and today was the first day. It went really well-even those who hadn’t lifted before had good form by the end! And I’m pretty sure they’ll hate me be sore tomorrow…We broke the training up into 2 days, so I have the other half of the team Wednesday morning. I never realized how much I love teaching something I’m super knowledgable about! And I can’t wait to see everyone get stronger.

We allotted a full 2 hours for the first session so we wouldn’t be rushed, but it only took 1:15, so I had plenty of time to grab coffee and eat my packed breakfast before class.

I didn’t exactly need coffee today, except for the fact that I had over 2 hours straight of Organic Chemistry today-Tuesdays are rough because of this! However, I don’t think I’ll have a problem getting through them because the first class of the day is Human Nutrition! Today, I sat in class with the biggest smile on my face. I love learning and doing things I’m passionate about. Leading weights+Nutrition class? How could I go wrong?

Lunch was also a repeat of yesterday, eaten in class.

Note to self-next time pre cut the chicken if eating in class. Don’t attempt to eat with only a fork…

After class I went to read Bio in a little cafe and grabbed a snack-it wasn’t my first choice but it did the job!

Since my car was still in the shop, I had to bike to Crossfit today. It gave me time to reflect-and I realized, I’m in such a good place in my life right now. I’m happy. I’m doing things I’m passionate about. I love teaching weight lifting. I absolutely cannot weight to teach Spin-my playlist is ready to go! I love the fitness industry, and I love Nutrition. I’m branching out and trying new things this quarter-Mariachi band? What? 

I feel like I have so many opportunities right now-I’m going to talk to my Nutrition professor about different careers in the field-I don’t particularly want to be a Nutritionist, and I would probably prefer something on the research side of things. I’m considering signing up for a conference in San Francisco about the obesity epidemic-one of my favorite scientists ever, Robert Lustig, is going to be there. (Yes, I know I’m a nerd for having a favorite scientist!) Also, my friend in my sorority asked me if I could lead some type of fitness-y event for our winter recruitment, like yoga or spin (my suggestion). I’m planning on gathering a some friends and hopefully some of the quidditch team, who I sort of have control over now, to practice teaching a spin class to real live people! 

Another new thing? I went to the weight lifting class at my Crossfit gym. The weight lifting class isn’t exactly an add-on-it’s its own program. I love Olympic Lifting, and I just don’t get enough opportunity to work on it in Crossfit, especially this particular box. 

I forgot how much energy Olympic Lifting takes! I didn’t even lift that heavy, but each rep really takes it out of you! It’s also mentally exhausting. Oh, and it lasted an hour and 45 minutes. I was doing snatches and clean and jerks for 105 minutes straight. My body just kind of felt numb afterwards. Not exactly tired, not out of breath, not necessarily burning muscles, but without energy. I don’t even want to think about how many squats were involved today. It’s been a long time since I’ve done any significant amount of Olympic lifting!

Oh, and I may have agreed to do a weight lifting competition. (Not a Crossfit competition, Olympic lifting!) It’s in February, but at this point in my life I feel a little unprepared. In the last year and a half, my technique has faltered a bit, but I’ve gotten stronger, so when I nail down technique, that should be awesome, right??

On that note, I was craving protein like crazy when I returned to campus. Specifically, MEAT. It’s interesting how our bodies know exactly what they need! This may be kind of strange, but when I eat less sugar, I tend to crave meat more. But I’ll roll with it!

Greek salad, some not super excitingly cooked kabocha squash, a few brussels, and MEAT-chicken with ketchup. Lots of meat. It was heaven. 

After dinner, I finished the other half of my Quest bar from the previous day, as well as the last of my double chocolate banana bread.

A couple of days ago, I started tracking my food intake on My Fitness Pal, more for interest than anything else! It’s cool to see the ration of carbs to fats to proteins-my protein ration was pretty low, so I guess it was no wonder I was craving it! What drives me crazy though is the sugar count. I really wish it was divided into added sugars and natural sugars. There is a BIG different between lactose sugar and high fructose corn syrup! I also don’t understand how my sugar consumption was insanely high today, especially compared to yesterday, when I ate basically the same thing both days? I’m not reading too much into it though-I feel really good, likely thanks to balanced meals and more veggies in my life! 

That’s all I have today! I swear this post would have been insanely upbeat BEFORE the lifting drained my energy! 

Tomorrow morning, I am training quidditch again and then will do another run through of my spin audition playlist. AHHHH can’t wait! So much excite happening right now!

Next Quarter’s Meal Plan and Dining Hall Breakfasts

Hey everyone! I am literally so close to being on break! I only have one more exam to go-tomorrow morning! I’m taking a study break to blog-ok, to b honest, a pre-study break. For some reason I got a late start on the day, despite waking up and getting going before my alarm. But I’ve been thinking up a post all morning and I know I’ll be distracted until I post. 

First thing’s first. Since my roommate’s birthday is over break, I wanted to do something for her before. She can’t eat gluten, and we’ve both in theory been trying to avoid sugar, so I made her the 21 Day Sugar Detox Apple Spice Sponge Cake from Pain Free Kitchen, and it came out so well! I started my morning with a spin workout on my own and a short run. When I walked out the door, I came upon Finnegan, the friendly campus cat.

He was meowing at someone’s window when I heard him and called out to him. It was 31 degrees this morning-I think he was so cold! He walked right up to the door of my dorm and acted like he wanted in. I felt so bad, but I was on my way out!

My run was only an easy mile on the treadmill. I was planning for 2 but my calves were kind of tired from spinning, and my book on tape ran out. Ok, maybe MOSTLY because my book on tape ran out. Since I was on the other side of campus, it occurred to me to try the campus coffeeshop (a different one). I’m so glad I did, my cappuccino was fantastic.

Also, I just wanted to share with you guys-I’m wearing sparkly pants. Hey, anything that makes me happy during finals week is good enough for me!

Now, let’s talk food. My eating habits haven’t been terrible this quarter. They’ve been pretty decent for the most part (not counting finals/midterm weeks…) and I generally feel pretty good. 

As for my body? It’s fine. It’s whatever. I can lift heavy things. That’s cool. But I’m ready for the next thing, the next challenge. I’ve set my sights on faster 5ks-I think my life goal is to break 23:00 (and no I’m not particularly close). I think leaning out is definitely going to help get me there-carrying around extra weight will only make this more difficult! Plus, I hate wasting food. And I hate spending money. And dining hall food for the most part is so-so. And I could definitely feel more awesome overall-I’ve had way too many stomachaches lately. 

For some reason, I’ve been especially hungry in the mornings the past few days, and I’ve actually been craving dining hall breakfasts. Here’s today’s (plus a pancake):

Toast with cream cheese, eggs, and spinach, a small blueberry muffin, and fruit. There’s nothing wrong with that. And yet…I feel so gross right now! Dining hall eggs…not the best. I’m not sure what they cook them in-tons of butter? Cream? Ugh. Anyways, back to the meal plan. I’ve made meal plans for myself in the past but they always horribly fail. Why? They’re completely unrealistic. Tip-never make meal plans when you’re really full and can’t imagine being hungry again. The food I plan is only a fraction of what I need to eat so I’m never able to follow them. That being said, I’ve been tracking my caloric intake the past few weeks. I have a pretty decent idea of how much I can eat to maintain my weight. Which means I can make much more realistic meal plans. Honestly, one of the biggest reasons I want to meal plan is to avoid wasting food and eat better food. And have more of a routine-if I have a plan for a similar eating schedule everyday, my body will adjust to it. Plus, if I plan I can go to the campus store and stock up on the veggies I need for the week-which takes meal plan dollars so free food!

I also want to focus more on eating REAL food. It’s hard to eat well when you don’t have the right things on hand. I found myself overdosing on Thinkthin bars the past few days, which is not great for my stomach-but they’re so convenient!

In the afternoons, I usually want something sweet and carby. So why fight it? It’s better than stuffing myself on “healthy alternatives” immediately before a workout (not a good feeling). I used to eat banana bread before morning weights in high school, and all kinds of quick bread before morning practice for crew last year, so it actually is the perfect pre-workout fuel for me (wonder why my body craves it? Our bodies are smart!). Over break, I’m going to make a ton of quick breads and freeze them. I’m already dreaming of my double chocolate banana bread. Image

 

For breakfasts, I might go back to my typical high school post workout meal of yogurt with honey (which the school market sells), or with brown rice syrup and cocoa powder.

Maybe some days, cottage cheese and fruit. Maybe something with sweet potato? It’s going to take some experimentation. And maybe some meals at the dining hall-with hard boiled eggs, not scrambled though!

I also want to do weekly veggie prep. And lunch prep-I generally pack my lunch, and given I usually have -2 seconds to pack my lunch as I run out the door, it would be great if it was easy. And I love getting some veggies in at lunch!

I’m also crazy excited to go home tomorrow and eat whatever my little heart desires. I’ve been craving my spinach-chocolate protein smoothies like crazy lately!

I’m also confident that I can maintain good health over the holidays-and no, I have no intention of depriving myself either! I’m in a much better place this year than last year-last year I felt like I was missing out on the holidays by being at school, so I compensating by gorging on holiday foods. I felt awesome over Thanksgiving break, so I’m just looking forward to enjoying the holidays free of worry!

Speaking of looking forward to-not sure if anyone’s been keeping track, but I have my Santa Run 5k on Sunday! I’m super excited-I pretty much have my outfit planned out. And no, I won’t be wearing a Santa Suit-I want to PR! After not being able to see me at the finish of the Turkey Trot, I had requests form my family to not wear the same color as everyone else, so I’m thinking my neon green shirt from last year’s Santa Run should stick out!

I’ve been training my butt off for this race! Track workouts 2x a week in dark sub-freezing temperatures, Crossfit, and extra rowing workouts…I’m ready!

I have 5ks scheduled for February and March before I get into half training, so I will definitely be able to see if my whole meal planning thing makes any progress for me! 

As for the future? I really love short speed workouts. I have 2 halfs scheduled…and after that? Haha, most likely I will either retire from distance running for a while because my feet definitely prefer shorter distances, or run a full marathon. Opposite extremes, right?

Do you plan or prep meals?

WIAW-Meal Prep Edition

Happy WIAW! As always, a giant thanks to Jenn for hosting this weekly party!

Since starting 12 Days of Christmas, I haven’t gotten to talk about my day to day eats in a while, so let’s dive in, shall we?

The most exciting thing I did before returning to college? Meal prep! I wanted something veggie packed and easy to grab and go, so I made a TON of egg cups-they’re filled with egg, chopped kale or spinach, and cheese-some gouda, some parmesan.

I also made one with cranberry sauce and turkey, if you’re wondering. 

I wanted quick grab and go sweet breakfasts as well, so I made mini versions with egg and blueberries, plus a little cinnamon. The most genius thing I did though was mix up some of my pumpkin starter with egg, and top with cinnamon cream cheese. YUM.

I also made a few with fig balsamic and goat cheese (the bottom ones).

I made an extra batch to freeze as well, since everything was already out! I used the pumpkin starter again but added blueberries.

I’ve also been eating a lot of leftover butternut squash soup, from Thanksgiving. SO GOOD. I top it with cranberry relish and creme fraiche.

Another use of leftovers? On my last night home, we used turkey to make quesadillas with jack cheese, spinach, and mushrooms.

My roommate is seriously the best. She brought back an entire crate of fruit from her trees at home, and it’s like 3 layers deep in persimmons.

Obviously, those have been kind of a staple in my diet lately.

Additionally, the giant plate of asparagus at lunch has returned-I topped them with a fresh herb seasoning mixture, and then nutritional yeast. Plus my turkey egg cup.
