Between my trip and my crazy work schedule since the trip, I haven’t had the time or energy to even open up my laptop! That being said, I only have 2 more days of my summer job, so expect all kinds of posts coming up!

When I caught you last, I was hanging out on my friend’s couch in New York City!

Now, it’s time to update you on our adventures since! It was a whirlwind 1.5 days-I think I got a taste of pretty much the whole city! It was disgusting weather-HOT and humid-super muggy. The air was thick. We had a very busy couple of days, full of walking. We probably walked 10-15 miles on Monday alone. One thing I will say is that being on my feet 8 hours a day at work has seriously conditioned my feet and legs. My feet didn’t bother me at all, and my legs didn’t feel tired! I’ll take it! (I also owe you guys a post about my summer job.)

We walked from the Subway to Battery Park.

From there, we walked to Ground Zero. It was very moving, and taking a picture for me felt disrespectful.

Our next stop was lunch-I wanted to get some NY pizza! We found a place with gluten free crust and stopped there. There was a deal for 2 to split a small pizza and a salad, so that’s what we did!

The salad was excellent-chicken, cheese, truffle, pear, and a balsamic dressing. Our pizza of choice was margarita.

Although the crunchy crust of the pizza was not the typical New York crust, everything was delicious.

After lunch, we hightailed it to our reserved time slot at a cat cafe (in Chinatown). I was SO pumped for this. We were cutting it a bit close on time, and my friend kept laughing at my power-walking pace. I wasn’t going to miss those cats!

The kitties were very mellow and spent most of the time sleeping. Near the end of our timeslot, they released 3 black kittens! I think I need to open a cat cafe later in life. I need an outlet for all the kittens that are sure to find me working at a vet.

After our time with the kitties, we stopped at a gluten free bakery, where we split a banana-chocolate-caramel cupcake and a frosted donut. Both were excellent!

On our way to finding pizza, we spotted the following sign outside of an interesting looking coffeeshop:

If they have cappuccinos on their sign, they must be good! I was sold. After some further research, we learned this little place was on the list of top coffee in NYC! My friend has been on the search for the best coffee this summer in NY, so we had to go.

The verdict? Yes. Just yes. Milk foam quality was high-nice and smooth. The espresso had no bitter aftertaste either. I didn’t even care that the outside temperatures were brain meltingly high!

After that busy day in the sun, I needed a nap and air conditioning to rally before heading out again. We convinced my friend’s sister to come with us to a gluten free Italian restaurant. Upon getting off the subway, we found the Friends’ fountain! Definitely a highlight of the trip.

We also found the cafe the Central Perk was based off of (according to Google).

For dinner, I had a delicious dish of grilled chicken, roasted veggies, and garlic mashed potatoes.

Then, we headed off for a truly New York experience-a rooftop bar in Times Square. I should mention-I’ve never been to NYC before so this was quite the experience!

We each had a glass of champagne before calling it a night!

The next morning, we set out fairly early to fit in as much as possible before I had to leave for the airport at 1pm. It was a busy morning! We started with authentic NY bagels. I had an everything bagel with herb cream cheese, and we split an egg bagel. Yes, NY bagels are as good as everyone says. They were amazingly chewy, and perfectly toasted. Plus, there was an abundant selection of cream cheeses. There must have been 15 choices!

Our next stop was the Chelsea Highline, an elevated platform to walk on.

By the end of the walk, I was sweating buckets and could not resist an iced latte when we found a Blue Bottle Coffee. I know Blue Bottle is an SF thing, but can one really complain about excellent coffee?

We then went to Chelsea Market (similar to the Ferry building in SF)-an indoor market with little stores that sell high end food. I came away with truffle salt, garlic infused olive oil, and peach balsamic.

For my final meal in New York, I knew I had to try the avocado smash. Apparently NY has quite a few Australian cafes, which have 1. really good coffee and 2. avocado smashes.

I couldn’t pass up iced latte #2 of the day (but don’t worry-they were decaf!). Fantastic.

My friend and I split an avocado smash on gluten free bread, with 2 poached eggs on top.

This ended up being perfect-a full smash probably had over an entire avocado on it, and one smash had 2 slices of bread.

This was delicious, and will definitely need to be recreated!

I know I mentioned a lot of gluten free products on this trip. This is partly because my friend has a gluten sensitivity, and partly because my stomach isn’t 100% and I think going gluten free, especially when my stomach is sort of flaring up, tends to help. I felt a little sick on this trip, and really had to watch what/how much I was eating to manage it. However, this definitely didn’t hold me back, and I had an amazing first experience in NYC!

Since my Internet has been down lately, I’m getting ahead on catching up (?) and sitting at Starbucks right now. Not sure if I really need caffeine right now but it is what it is. This morning I went to 7am Crossfit and it DEMOLISHED me. I ate when I got home, but I was feeling sort of light headed so I got a pumpkin muffin to go with my (plain) latte.

The aforementioned killer workout? First we found 1 rep max of squats. I was stupid and didn’t bring my lifting shoes (which add about 20 lbs to my 1 rep max) so I was about 15 pounds of my max, but at least I lifted a tiny bit more without lifting shoes than I have before, so I’ll take it! The WOD though. Whew.

10 rounds:

15 wall balls (20/14)

3 cleans (135/95)

I did this Rx with 14 lb wall balls and 95 for the cleans. Sadly, the cleans were actually the resting portion of this workout. The wall balls killed me, and I was sucking air immediately. Wall balls really get your heart pumping! I don’t always eat before morning workouts-not usually before morning runs or spin, but I was glad I ate a little something before this class or I would have actually passed out. WHEW.

In terms of food lately, I have a couple of recipes to share! The first was one of the veggie salads from the culinary bootcamp I went to for work in DC.

This dish is the first time I’ve ever actually enjoyed eating beets. And I could eat it by the plateful. I even had some for breakfast this morning.

 

 

 

Gingered Root Veggie Salad

Ingredients:

.25 oz fresh ginger (1/2 tablespoon)

4.75 oz carrots

4.5 oz beets

4.5 oz parsnips

1.5 T honey

1.25 T lemon juice

1 T tarragon

1/8 T salt

Peel ginger, carrots, beets, and parsnips. Shred them in either a food process or a grater (I used a grater). Mix up the remaining ingredients in a small pour, and then toss everything together.

We had this with turkey burgers and roasted sweet potatoes. While I’m certainly not Paleo, I had a Paleo phase about a year ago, and discovered that I actually prefer turkey burgers in a lettuce leaf, rather than a bun!

Recipe #2 is another fall dish. I was craving pumpkin, and just happened to find a jar of Trader Joe’s Pumpkin Butter in the pantry from last year so I decided to experiment a bit. I’ve perfected banana custard (I still need to post that recipe), so why not pumpkin? This fall dish is light and fluffy, and the flavor is a bit subtle. This is healthy enough to eat for breakfast, and is packed with protein. If you want more pumpkin, feel free to add more pumpkin butter or add some cinnamon/pumpkin pie spice.

Pumpkin Spice Custard

Ingredients:

2 cups fat free milk

1 cup egg whites

1/4 cup cornstarch

1 T butter

1 t vanilla extract

4 T pumpkin butter

1. Heat milk until boiling. Meanwhile, in a medium size bowl mix together cornstarch and egg whites.

2. Once the milk is boiling, add it to the bowl (and not the pot it was in). Add milk slowly, stirring the mixture constantly. If possible, pour the milk on edge of the bowl to avoid cooking the egg on contact (i have yet to mess this up so don’t worry!).

3. After stirring the milk and egg mixture in the bowl, return to the pot and cook on medium high, stirring constantly,

4. Cook until the mixture thickens to a custard texture.

5. Once off the heat, stir in butter, pumpkin butter, and vanilla.

Seriously. Since I finished my first final yesterday and I don’t have another one until Wednesday, today was definitely a day off!

This morning, I ran with Crossfit in San Francisco! We carpooled up to Crissy Field and I ran with my phone for picture taking purposes.

It was an absolutely beautiful day to run. Fairly warm but windy up higher, with some fog around the bridge.

A group of us wanted to run the bridge, which was a bit of a ways up-lots of stairs! And the bridge isn’t super flat either! So here are some bridge pictures!

We definitely kept up a decent pace. When we weren’t climbing, it was under 9:30 which is on the fast side for me, especially after the hills! I was basically dying by the end. We ended up doing just under 7 miles and my legs are definitely feeling it!

On the way to brunch afterwards we stumble upon a giant food truck gathering so we stopped there instead.

The first thing I got was the best latte I’ve ever had. By far. It was AMAZING.

Since the coffee took a while and I didn’t want to make everyone wait, I got my food from the place with a shorter line-I ended up with and Indian roll filled with Chicken Tikka Masala.

It was good but MAN was it spicy. I bought a bottle of water and was getting seriously concerned when my water was disappearing faster than the pain in my mouth! I’m the biggest wimp with spicy food!

I then went back home to drop some things off to begin the move out process and ended up getting drawn in by the air conditioning and the cats.

I actually broke my no sugar thing. Sort of. I was tentatively planning on ending it today, and I celebrated with a slice of leftover birthday cake from the freezer.

It didn’t spark any crazy cravings, so here’s to another week! I know what my next dessert will be though-I volunteered to bake a Boston Cream Pie from scotch for my sister’s graduation next weekend!

Like I said, I was sucked into the world of cats at home. I ended up not leaving until late into the evening, and I spent a lot of time with a very purry kitty.

It was such a hot day today, and since my dorm has no air conditioning, it gets pretty bad. I’m sitting here now sweating! I also had dinner at home. We had a spinach and mushroom quiche from Whole Foods, broiled asparagus, and a green bean creation I made. I sautĂ©ed up some frozen green beans (we didn’t have a lot on hand in the veggie department) with roasted garlic, green onions, and later some garlic and herb laughing cow. Yum!
