WIAW and Sunshine

Happy Wednesday! I’m going to link up to WIAW today because I have lots of unshared food pictures!

Before we get into that-on the fitness front, I’ve sort of switched around my schedule. In the past, I tended to run in the mornings versus do Crossfit in the evenings. The problem with that is when I do Crossfit in the evenings, it’s really difficult to make it back in time for dinner before the dining hall closes! Plus my evening motivation to make it to Crossfit is too low! That being said, I’m officially in 5k training mode with (hopefully) lots of speed work coming up!

In terms of actual workouts, I went to one last spin class at the gym from home (it’s halfway between home and school so it’s not outrageous to go once) before my membership ended. Of course, it was fantastic.

Monday morning we tested our 1 rep back back squats for a final time during the squat cycle we’ve been doing. Mine was sort of meh, sort of improved. I improved 5# from my 1 rep max at the beginning of the cycle, but I was still 10 lbs below my all time 1 rep max (205#). It was meh because 195# felt easy, but I kept missing 200#. Back squats are frustrating because the second you give in, you’re not making the lift!

After back squats I had the pleasure of doing and AMRAP of I believe it was Crossfit Open 14.4 last year? The Open workout at the time was probably the worst Crossfit workout I’ve done. 21-18-15-12-9-6-3 thrusters and over the bar burpees. Thank goodness, we did a 12 minute AMRAP, which meant I didn’t make it all the way down the ladder! But now my squatting muscles are scorched.

Tuesday’s Crossfit workout was lighter. I went to the 6am class since I have 9am class on Tuesdays. We did hang power cleans for strength and kettle bell snatches, wall balls, and 400m runs for the WOD. Then, after spending hours in the library, I went for a 3 mile tempo run (5k training!). I have a ways to go…but I kept my tempo pace pretty closely. It’s a good start! Ok-food time!

I went to a yoga class last Thursday and went to Eric’s deli-cafe afterwards for dinner with my parents to discuss pre-vet stuff. I had half a turkey and avocado sandwich, and a house salad.

IMG_0940

My mom got me a couple of these protein boxes. They’re pretty similar to the ones at Starbucks, but sun butter instead of peanut butter! Good and easy. I had 2 meals of this on Friday. We don’t have to mention the fact that I didn’t have a single vegetable…

IMG_0945

Saturday morning, I had to drive a ways to get gas. Long story short, my car is SUPER picky with the gas it will take and the check engine light was on and the engine was shuddering so I topped it off with “better” gas. Anyways, Whole Foods was close so I stopped in for brunch. Maple french toast casserole and chilaquiles were the highlights here!

IMG_0950

Mexican dinner at the dining hall! But more importantly-GUAC! I made myself a salad.

IMG_0954

Salad I picked up from Whole Foods.

IMG_0962

Dining hall dinner-BBQ chicken on salad, and cheese and broccoli mini-casserole.

IMG_0963

Dining hall breakfast-eggs and roasted veggies! I LOVE when they have those!

IMG_0964

Cappuccino because I woke up before 5:30am and I’m a college student. However, I’ve gotten a lot of coffee lately and I’ve been generally over caffeinated so there’s that. I get to my 9am and announce to my friend that I got coffee. Her response? “I can tell.”

IMG_0966

Lunch courtesy of my freezer. Balsamic roasted brussels sprouts, grilled chicken, and mashed sweet potatoes.

IMG_0967

My favorite morning glory bread from a little cafe on campus.

IMG_0968

A greek salad with chicken, roasted carrots, and sweet potato fries. This is pretty much my ideal dining hall dinner right here.

And lastly? The weather here lately has been insane. Sometimes I forget how lucky I am to be here.

WIAW-Latest Eats

Happy Wednesday! We all know what that means! Thanks Jenn!

With 12 days of Christmas, I haven’t gotten to share some of the random things I’ve eaten in the past week or so! How tragic would that be?

Also-another exciting note-I entered the lottery for the Cherry Blossom 10 miler in DC in the spring. I think the odds I get in are low but how amazing would that be??

Ok. Food. As promised.

IMG_0140

Spinach and artichoke soup, from a Buzzfeed article of all things! Topped with parmesan.

IMG_0143

Post-turkey trot, pre-Thanksgiving breakfast of mini frittatas and a crumpet.

IMG_0202

A really freaking amazing salad in Napa. Avocado, fresh mozzarella, tomato, olive oil, and sea salt. Simple but perfect.

IMG_0209

Baby fruit tart from Napa.

IMG_0210

Chocolate sea salt caramel cupcake.

IMG_0243

Trader Joe’s mushroom risotto with some spinach tossed in.

IMG_0245

Carrot soup with cilantro.

IMG_0261

Tupperware lunch of leftover broccoli and chicken. (Plus a sweet potato that was scarfed down earlier…)

IMG_0265

Dining hall dinner. Roasted veggies and chicken, and a mini veggie pot pie. The highlight was the zucchini, which was roasted with garlic and cheese.

IMG_0272

Back to my typical breakfast of yogurt+sunbutter+peaches.

IMG_0275

Dining hall lunch on a rainy day-eggplant parmesan, veggies with Alfredo (not my favorite veggies served that day so you gotta do what you gotta do!) and polenta with sundried tomatoes.

And a bonus because how cute is he?

IMG_0208

What is something that you haven’t had in a while?

For me it was the eggplant parm-I don’t think I’ve ever had it before!

WIAW-Home!

Happy Wednesday! Who is excited for Thanksgiving??? I know I am! But first, let’s welcome Wednesday with our weekly party. Thanks Jenn for hosting, as usual!

I don’t have a full day of food documented, but here are some highlights!

A new protein bar post Crossfit. We did lots of heavy squats, and I needed SOMETHING. Given there are about 3 protein bars out there without nuts, I didn’t have a whole lot of options. This was good though!

IMG_0105 IMG_0104

For dinner on Monday night, we tried a new soup recipe, courtesy of Buzzfeed. This was tomato soup with sautéed spinach and fresh mozzarella. After adding cheese, you broil it until melted. Pre-broiling and post:

IMG_0106 IMG_0107

Served with some fresh wheat bread, this was a fantastic fall meal!

IMG_0108

Tuesday morning I went to a spin class at a local studio I had never been to before, Revelry Fitness. It was awesome. I think the types of things we did were sort of similar to Soul Cycle, but without all the unsafeness that drives me crazy about Soul Cycle. It was much more technically sound, and a great workout! Plus, they email you your bike stats after class, which I thought was pretty cool! I’m going again this morning 🙂

ANYWAYS, afterwards i went to a coffeeshop with my mom and got a strong cappuccino. I was WAY over caffeinated, but it is what it is. Check out the height on that milk foam!

IMG_0111

For lunch, I met up with the rest of my family, including this guy.

IMG_0115

For lunch was a teriyaki chicken wrap.

IMG_0112

For dinner Tuesday night, I threw together leftovers (of a meal I wasn’t present for) to make a big old salad, along with some cheese and crackers (Trader Joe’s Cranberry Chèvre is insane!).

IMG_0130

Given I’ve had maybe 2 avocados in the past 10 weeks, I won’t complain about leftovers if they include massive amounts of guacamole. This salad had leftover taco meat of turkey and beans, salsa, cheddar, and of course guacamole.

The night also included some recipe testing for my blogiversary. Can’t wait!

What is your favorite form of avocado?

WIAW-College Year 3

Happy Wednesday! How crazy is it that I started this little blog when I was a freshman and now I’m a junior? Craziness. I should do a throwback WIAW at some point to compare the years. But for today, we’re doing WIAW with this week’s food!

WIAWbutton

First of all, I want to give a little update on my plantar fasciitis. It’s been 4 days now with no running and my feet are feeling sooo much better. Yesterday, I felt like they had returned to their normal pain levels and the outside of my foot wasn’t really hurting, but today they actually felt good. I think there were a number of factors that went into the improvement. Not running was a big one, but I think also returning to a normal routine with my normal shoes also helped. Plus, I’ve tried to cut back on sugar lately because I was hoping that would help reduce inflammation-I know it’s a long shot but I wanted to try everything! So maybe it helped. I’ve also been wearing the night brace which means I wake up feeling better. I can tell I’m getting better flexibility in my ankle/achilles as a result as well.

Ok-onto the food!

In terms of breakfasts, yogurt bowls have been the name of the game. The first one was plain yogurt with canned peaches and sun butter. I’m really loving that the nut-free dining hall nearby has sun butter!

IMG_9375

Yogurt bowl #2 was back in my room and was plain yogurt (whole milk, non-greek) with sun butter, raspberries, and a drizzle of brown rice syrup.

IMG_9380

In terms of other food, I packed some lunches from home before I left.

IMG_9367

Each one contains grilled chicken, cumin roasted yellow cauliflower, and brown butter sage mashed sweet potatoes.

IMG_9378

As I have said before, the dining hall closest to me now is the best one on campus. The food actually has flavor, which is pretty revolutionary. For one meal, I had a mediterranean salad with grilled chicken and some cream of spinach.

IMG_9381

The cream of spinach was so, so delicious.

I also tried the dining hall’s most famous dish-Death by Chocolate.

IMG_9382

Honestly, I wasn’t a big fan. It was a little too much for me. It was super rich chocolate cake covered in fudge, and it’s fairly dark chocolate.

Another thing I’ve been making is chocolate milk for post workout.  Well, technically it’s hot chocolate. I got some really good quality whole milk from my favorite local dairy at Whole Foods. It even comes in a bottle. Butttt it’s non-homogenized, which means the fat isn’t really mixed in. In other words, it’s full of chunks of fat. It really freaks me out. I have to drink it hot to really mix it all up. My chocolate post-workout drink is milk, cocoa powder, and brown rice syrup!

IMG_9386

But hot, it’s so delicious! Although I may have consumed enough cocoa powder to make me a bit jumpy.

What kind of milk do you buy?
