WIAW-Microwave Spaghetti Squash Mac n Cheese

Breakfast:

A Flap Jacked maple pumpkin protein muffin. I’ve learned these are much better when not overcooked. I think the chocolate is definitely superior though—this flavor tastes pretty artificial.

Coffee:

I’ve continuing down my list. This week’s choice was Northwest Coffee Roasting Company.

For any locals, it’s in Central West End. I got my usual decaf cappuccino. My evaluation? This was good coffee, stronger than the last two places I went to. But it didn’t have that almost sweet, rich flavor of the top notch espresso. Also, it was not air conditioned, so I didn’t stick around as long as planned. Tuesdays are my days off, but I’m trying to spend the day working on an online class, so I switched to the local public library after about an hour.

Lunch:

I stopped into Whole Foods to pick up spaghetti squash and the ridiculously delicious nectarines I found last week. While there, I figured I might as well hit up the hot bar for lunch.

Roasted beets with herbs, roasted carrots, roasted corn and artichoke, steamed cabbage, sweet potato with raisins and apple, and chilaquiles. Plus a root beer Zevia. I still have mixed feelings about Zevia because I hate the taste of stevia, but it’s a decent treat now and then when I want something more interesting than water.

Snack:

A handful of KIND granola, a handful of frozen grapes, and a Chocolate Mint Vega bar before Crossfit.

Crossfit:

Ow. Ow. Ow. So you may recall I banged up my hand pretty badly last week, leaving my palm rather skinless. It’s the base of my palm so I can hold a bar. I went yesterday and it was fine, but today…ow.

Strength:

5×5 narrow grip bench press. I worked up to 80#.

WOD:

5 rounds, 65#:

5 deadlifts

5 hang power cleans

5 front squats

5 shoulder to overhead

5 back squats

Cleans? Ow. The bar wasn’t touching my scrape, but the hanging/stretching motion was killer. And then that made all the other movements hurt. Again, ow. I finished in 7:23.

SnacK:

I went to the grocery for real post-Crossfit and spent forever debating (mostly on ice cream but that’s a whole other issue.) I was starving when I came out, so I snacked on some chocolate rice cakes as I loaded up the car.

And then while cooking dinner, I tried some cotton candy grapes. I saw these in someone’s cart as I checked out last time, so I was pumped to try them!

They do taste like cotton candy. They’re delicious.

Dinner:

This one was a little more involved today. I made spaghetti squash mac n cheese, entirely in the microwave! I was actually planning on baking the squash, but I microwaved it to soften it enough to cut (the website I found recommended scoring it and then microwaving it a few minutes), but by the time I cut it, it was already pretty soft. I cut and microwaved it most of the way in the afternoon, so when I came back from the grocery all I had to do was microwave it a few more minutes (I think maybe 15-20 total) and prepare the mix-ins. I took my spaghetti squash and tossed it with broccoli (frozen) and y favorite Greek seasoning blend for flavor. Then I microwaved 1/2c reduced fat cheddar and 1/4c nonfat milk, with some salt, pepper, and garlic. Then, I mixed up the sauce and squash blend, topped it with parmesan, and heated it up just enough to melt the parmesan.

Now, I have enough leftover squash for probably 2 more dinners! I might do this once and then traditional marinara once. This was delicious, and aside from cooking the squash, super easy and came together quickly.

Dessert:

Yasso salted caramel frozen yogurt bar. LOVE these. I tried to buy more today to replenish my dwindling supply, but they didn’t have them. Every other chocolate or caramel ice cream bar at the grocery had coconut oil. Booo.

WIAW-St. Louis Adventures

Hello, and happy first WIAW from St. Louis! Thanks as always to Jenn for starting WIAW!

If you haven’t gathered, I’m in St. Louis! I moved here for 3 months, and I’m starting to get settled in. I had my first day of work yesterday, and Tuesdays I have off, so I took the time to explore the city a little bit more. So let’s dive in!

Breakfast:

I woke up hungry and had a few crackers and strawberries while I made my yogurt bowl, which was 2% plan greek, cinnamon KIND granola, sunbutter.

Plus a really, really good nectarine. I was pretty surprised, to be honest. The few I bought were looking pretty sad.

Coffee:

While I do have an extra day off during the week, I also have online class(es) to work on, so I decided on my day off I will “commute” to the best coffeeshops I can find and work on my schoolwork. I have a list of coffeeshops that I intend to hit up. Today’s choice was Blueprint Coffee in Delmar Loop, near Wash U. Watch their video<-to know they’re legit! Coffee is a cherished process at Blueprint, and it did not disappoint.

As per usual, I had a decaf cappuccino and it was amazing. I would HIGHLY recommend Blueprint. Another plus? I was able to park on the street right out front! I spent a couple of hours there making sure my vet apps are in order, signing up for said online class, and looking into some spin teaching opportunities for while I’m here.

Around 11, I decided I didn’t want to overstay my welcome, so I walked around the neighborhood a bit. So cute!

Lunch:

I didn’t have too much else to do in that neighborhood, so I decided to make one last stop for lunch: Kayak Cafe. This was another cute little coffeeshop. I had a sandwich on GF (toasted!) bread with turkey, swiss, spring greens, tomato, and herbed cream cheese. Yum!

It was interesting being basically on another college campus. I feel like I saw the college experience I didn’t have. I originally wanted to move out of CA, and I always pictured myself curled up in coffeeshops in the snow studying. I guess maybe this fall! Ignore the fact that my wardrobe is totally unequipped for snow…I spent the next hour and a half or so driving around exploring Clayton, Maplewood, and some other areas.

Snack+unfortunate situation:

When I got back, I had a few bites of Birthday Cake Halo Top, and then proceeded to lock myself out. I’ve been here 2 days…

I was taking my roommates dog to go out, which normally she would be let out the back but I couldn’t figure out how to open the door, so I took her out front. I didn’t think it was possible for the door to lock the way it did….so I was stuck outside with no phone or keys, just dog!

It took me about 30 minutes to find a way back in, but I did it! There’s always a way. I was SO happy to be back inside—my roommate wouldn’t be home for another 3 hours!

I decompressed from the situation with a peppermint Luna bar, 2 kitties, and Netflix.

I ran out to do some errands—joined a gym+grocery, before it was Crossfit time!

I went to my new box for the first time! It was sort of hard to find. It’s on a side street down an alley…It was a pretty small box in terms of people, probably the smallest I’ve been to. Definitely not a bad thing, just a little different! One big plus is that it seems to be in a good neighborhood, which honestly was the top priority for me.

I had a good workout! For strength we did close grip bench press. I’ve never benched with close grip before, so that was a bit of a challenge. My left side weakness was pretty apparent here! The WOD was a benchmark that we are going to retest in 4 weeks.

Baseline: 500m row, 40 air squats, 30 sit ups, 20 push ups, 10 pull ups

The push ups were definitely my weakest point, and slowed me the most (especially after bench!). I finished in 6:32.

When I returned, it was dinnertime!

Dinner:

I snacked on some watermelon while I started to get things ready, as per usual. I actually ended up eating most of this throughout the meal and cooking.

For dinner, I was planning on making some kind of scramble with spinach…and then I realized I forgot to buy spinach. Oops. This was my first time actually cooking here though! (Yesterday I microwaved soup…) Instead, I settled for an omelette and side salad. It came out pretty well! I used goat gouda and Italian spices. I also had avocado toast on the side.

I got the garlic powder from Whole Foods and it is POTENT. It has a super fine, almost powdered sugar-y texture, and tastes just like fresh garlic!

Dessert:

I tried some of these chocolate rice cakes. They were underwhelming. Plus a spoon of Halo Top.

It’s Crunch Time, My Friends

Well, we’re in the home stretch. My app will be submitted on Friday. Lots to do before now and then! (Just a note for anyone who may see this post and benefit: I’m submitting my app about a month before the deadline so everything has time to process, just in case!)

Although it’s Tuesday, I thought we could still do a little weekend recap!

My Saturday morning began with a fun spin class and a trip to the farmer’s market.

I really, really love figs. And California peaches—they cannot be beat! Pro-tip: put your farmer’s market peaches in the fridge ASAP even if they are still hard. They ripen super fast and will start to rot otherwise! (I knew this but still failed to do it…)

For lunch, I picked up a falafel salad with tahini dressing from a food truck.

And enjoyed the last of the caramel sauce with Halo Top and whipped cream.

The afternoon was low key, but dinner was delicious. We had grilled romaine salad with avocado, chicken, and grilled corn. Last time we made this salad, we used grade B maple syrup for the dressing, and this time we used syrup that was less than A. It made a HUGE difference—I’m never going away from B again! This was sweeter with less mapley flavor and the whole salad didn’t hve the same “wow” factor as before.

I was in the mood to bake, but didn’t want to commit to a giant loaf of bread, so I tried the 2 ingredient cookies I’ve been seeing all over the internet lately. 2 bananas, 1 cup of oats, 12 minutes in the oven at 350. I spiced them up a bit by adding some milk and semi sweet chocolate chips (I may or may not have gone to the store exclusively to buy milk chocolate chips, but worth it!), and fresh strawberries to some of them.

The verdict? Delicious, but I highly recommend adding chocolate chips. They MADE them.

Sunday morning, I went for a run! I went to my favorite place ever to run, down by the reservoir. It is just so beautiful there. I was struck by the fact that the last time I ran there, I was running on a stress fracture. I ran 3 miles! This is a big deal, because it’s the furthest I’ve gone since my stress fracture. I don’t think I’m going to be running longer than 3 miles for a while though. It’s a good distance, and there’s no reason to take any risks. My foot definitely doesn’t feel as good as new. It feels really creaky, and I think there might be some scar tissue there. But again, I am being careful.

Sunday afternoon, I went to a Giant’s game with my friend. It was AMAZING weather. No jacket—what??

My lunch was actually a salad. At a baseball game. I do concede that that is sort of ridiculous. I normally get amazing flatbread, but I’ve gotten it the last couple of times. This beet+parmesan salad was delicious though!

We left a little early to get on the train to go home, and in that time the lead was blown and we lost. :/

I was hungry by the time we got home, so my family and I quickly threw together fig and goat cheese salad with grilled chicken, and had some of the homemade buttermilk biscuits my mom whipped up that morning.

Monday consisted of vet school apps and a hard but fun Crossfit workout. We worked on snatches, and I was able to hit the prescribed 65% feeling good!

The WOD was full of all the things I love to do. I was the only one in the class, and would have preferred someone to suffer through it with! It was:

10 rounds: 5 pull ups, 7 front squats, 9 push ups

I think it took me around 16 minutes? I used 75# for the pull ups.

Food highlights for the day included butternut squash, chicken, and quinoa stew with roasted brussels spouts:

2 months later, I stand by my decision to ask the cupcake place to switch the dulce de leche and chocolate frostings, resulting in dulce cake with chocolate frosting, and chocolate cake with dulce frosting.

The best part? I still have 2 more in the freezer, which I’m eyeing for dessert tonight!

WIAW-My Shoulder is Cranky

Guess who is back for WIAW? I’m trying really hard to blog more old-school HLB style these days since I have more time. (Or am I just procrastinating vet school apps? We will never know.)

Before I get into my full day of eating, I wanted to share some things from Monday night.

We made a rosemary chicken, bacon, and avocado salad, although I left the bacon off of my portion!

I usually try to build my meals my having a protein, a carb, a vegetable/fruit, and sometimes a fat. Thus, I added a slice of gluten free toast on the side. My biggest health tip is to use fresh herbs generously. They really boost the flavor of the dish and add nutritional value, without extra calories/sodium.

We had some extra ripe bananas (I am NOT a spotted banana eater), so I tossed them in a pan with Earth Balance butter substitute (I like the flavor more than butter, actually), a spoonful of brown sugar, and cinnamon.

They sautéed up perfectly, and tasted decadent. The fruit naturally caramelizes, so it doesn’t take much sugar/butter for these to caramelize right up. I enjoyed my portion with some vanilla frozen yogurt. I like having the cold stuff in a separate bowl, otherwise I feel pressure to eat quickly before the ice cream all melts!

Now, finally, onto the full day of eating!

My morning began with my gummy vitamins and 2 gluten free crackers before Crossfit. Only 2 crackers because I wasn’t super hungry, and I was running late, but I like to have some sort of carbs in my belly before lifting heavy things.

At Crossfit, we worked on reverse hypers and pistols (onto a box for me). Reverse hypers are basically back extensions on the GHD. Fun fact: 3 years into Crossfit later, last week I finally learned what GHD stands for: gluts-hamstring developers. Who knew.

The WOD:

12 AMRAP:

5 deadlifts 155#

5 handstand push ups

The scale for handstand push up was strict press, and I of course took that option. I used 55# for the presses.After yesterday’s pull ups, my shoulders were pretty sore. My upper back actually got pretty tired from the deadlifts, something that doesn’t normally happen. I got through 10 rounds.

My shoulder is cranky though. I partially dislocated it a year ago, and while I can do everything now, it gets tight and painful if I use it a lot.

I wasn’t feeling yogurt for breakfast, so I decided to take advantage of my access to a Vitamix and make a smoothie. It was super simple, but super delicious: 1 frozen banana, cocoa powder, nonfat milk. I topped it with some raspberry KIND granola.

Because #nutrition, I do want to note that in my food choices, I do make an effort to stay pretty low fat. This has absolutely nothing to do with what I think the health merits of fat are—I think whole foods are extremely nutritious, including whole milk and olive oil, and in the past I’ve eaten a lot more fat and felt great. However, a lingering effect of my illness last year (I seriously need to do an update soon on that) is that I can’t handle much fat without feeling sick. So I choose the lower fat options as much as possible to stay feeling good.

I spent the morning doing vet school apps—I’m slowly but surely getting there!—before breaking for lunch.

On Sunday night, we grilled up a TON of chicken, so it’s been featured in pretty much every meal lately. I heated some up (and dipped it in catch up), and served it with a caprese salad. We were gifted homegrown tomatoes, so I chopped one up with fresh basil and fresh mozzarella, which I topped with salt and pepper. This is another example of choosing lower fat options—in the past, I might have topped this with olive oil, but I enjoyed it plenty without!

I also ate some gluten free crackers on the side, plus a couple of squares of mint dark chocolate.

I sent some emails and then went to the grocery to buy granola bars and things for dinner. An exciting new find was KIND dark chocolate granola, which I can envision on top of a chocolate banana smoothie bowl! I’m a big fan of KIND granola—the nutrition facts really can’t be beat. Also, a little goes a long way! It’s part of a great breakfast when paired with protein, such as yogurt!

Of course, I had to try some as part of my snack.

On the side was a farmer’s market plum and a NuGo bar. At this point, I basically eat exclusively Luna bars, but got a different brand to mix it up today. It was delicious, but honestly a little too much dark chocolate for me—I felt a little jittery!

I went to a spin class with one of my favorite instructors that evening. It’s a class with lots of choreography and push ups on the bike, but I really love her playlists!

Dinner made use of some of the food we had on hand.

Watermelon salad with mint and feta. Literally mint, watermelon, and feta.

Also, roasted garlic-parmesan zucchini and tomatoes. We topped them with basil, and this dish was incredibly delicious. The parmesan got brown and bubbly, and the vegetables were bursting with flavor.

For dessert, I tried a Blueberry Yasso frozen yogurt bar. I had Yasso bars most nights in Tennessee. I LOVE the salted caramel, and like the mint chocolate chip a lot as well. The blueberry was good too, but the salted caramel still holds the main place in my heart.

My family and I started watching The Gilmore Girls tonight. We finished our show last night (The Good Wife), and couldn’t find anything else we were in the middle of on Netflix, so we decided to give it a try. I like it well enough so far, and it’s quite a blast from the past (2000).

I was a little hungry, so I snacked on a little bit of KIND Dark Chocolate granola, and a few freeze dried grapes (they’re really fun—they were on sale at CVS!)

And now I’m planted in front of the Olympics. So far I’ve seen a couple of swimming finals, both of which I already knew the results of. It does make it less stressful though!

Coming Home

Hi friends! It’s been a little while. I’m home for all of 3 weeks, and it’s going to be a little bit of a vet school app bootcamp here. I’m struggling a little bit with the flow of my main essay, so I’m hoping this blog post is a nice little warm up to get my creative juices flowing!

Let’s catch up! I’m back in California. But let’s take it back a little bit for some food+fitness+life, shall we?

Tennessee Food

I finally improved the appearance of my new favorite breakfast a little bit. It’s just a sunbutter+blueberry sandwich, soaked in 1 egg white and then baked in tinfoil! Super easy and delicious, and the egg adds a little kick of protein. I ate theses with copious amounts of watermelon.

There was a Wednesday night Farmer’s Market with tamales. I had a delicious sweet potato tamale the week prior and was hoping for another one, but I was on the later so so cheese was my only option. Still delicious! On the side was one of the weirder things I’ve eaten. I sprinkled salt, pepper, and garlic on lettuce leaves and then dipped them in guacamole. It was just too much lettuce…

I’m a pretty big fan of Publix now. It was the closest grocery, and had lots of great healthy+GF options. And gourmet yogurt. This and the bananas foster yogurt was delicious!

I had one last honey lavender iced latte at K Brew while finished up the first draft of my essay!

Tennessee Life

On my last day, I got off pretty early. It didn’t take me long to decide what I wanted to do. I went to Ijams one last time for a little hike by the river. I took a slightly different trail than the previous time and explored some different areas.

And then Saturday I was homeward bound. What is crazy? There was literally no line going through security in Knoxville. As in, I was literally the only person.

My favorite cookies ever happen to be at one of the places in the SFO terminal. I was hoping the entire 5 hour flight that 1. I would happen to pass it and 2. they would still be open! It turns out, the place was right by where I exited security, so I picked up a spicy cinnamon GF cookie. I think I preferred the non-spicy version I tried previously, but this was the only option.

To be honest, it feels weird being home, especially the first day or two. I feel like I was worlds away, and came back a different person. I had so many new experiences in Tennessee, and I did so much in a short time. To be honest, I’m glad I’ve moved on to new things instead of moped around about how I was going to miss my undergrad. At first, I didn’t feel ready to go to TN so soon after graduating, but I think it was for the better.

Sunday, I dove right back into things. First, I went to a spin class at the local studio. Then, I made amazing banana bread. I used my tried and true recipe, and separated it into two halves: one plain, one with raspberries and chocolate chips.

For dinner that night, I was back to the soup+avocado toast grind. Butternut squash chicken soup.

That evening, I met up with my college roommate for the Panic at the Disco+Weezer concert. I’ve grown particularly obsessed with Panic over the course of the last year, so when I was able to make the concert work given my travel dates, I was excited! Honestly, I could care less about Weezer. I probably haven’t listened to them since middle school, but liked them well enough then.

It was a great show, but we had seats on the lawn so unfortunately we were pretty far back. I haven’t been to many concerts lately, but the concerts I’ve been to I’ve always been able to be closer to the action. Maybe next time!

I enjoyed Weezer as well, and found I knew more songs than I realized.

In terms of workouts, I’ve been going back to my home Crossfit. We tend to do more barbell movements there, and I’m already feeling this morning’s workout! For strength, we did back squats. It was supposed to be 5 sets of 3 at 90%, but since I lost a ton of strength with my foot injury, I did 5×5 at 70%. I’ve squatted some since my injury at the TN Crossfit, but it was pretty low volume. So I’m going to be feeling this. The WOD was also a heavy one: 15 Min AMRAP of 10 hand release push ups and 5 deadlifts, which I did at 155#. While my squats may have gotten weak, my deadlifts have progressed because it was one of the few movements I could do for a while! I made it through almost 12 rounds.

I also went back to teach spin on Tuesday! I’m subbing as much as I can in the few weeks I’m home. I saw a ton of regulars, which was just so fantastic.

When my roommate came, she brought a ton of AMAZING peaches! They don’t last a long time because they’re perfectly ripe, so we’ve been eating them like crazy. No problem for me! I had a peach+nectarine for breakfast the other day, with a side of banana bread.

Yesterday I had a cappuccino with a really delicious cranberry oat bar to fuel an essay brainstorming session.

And finally, the best thing.

We made Brazilian Cheese Bread! I got the idea from Alison. It’s made with tapioca flour and cheese, and is naturally gluten free. I used this recipe. They came out beautifully, and it was a super fast recipe!

We served them alongside Grilled Peach and Goat cheese salad, which was amazing with the fresh summer peaches.
