I know this seems to be the general consensus with the world, but I’m not the only one who can’t keep track of what day/month/year it is, right? I almost feel like time froze back in March when lockdown started, but somehow time keeps passing. All that to say, we made it to Wednesday, but how much do days mean at this point??
Breakfast:
Very similar to yesterday, but this time blueberry yogurt. + sunbutter+blueberry chex+ a mango on the side. This yogurt is a newer find for me, and I’m enjoying it quite a bit! Not too sweet, but still some flavor.
Lunch:
This one was inspired by all the avocado sandwiches from Jessica. That, and the 4 for $4 avocados I got at the produce stand last weekend! My GF wrap is filled with chicken, garlic and herb laughing cow, mustard, avocado, and lettuce. Plus a peach. I’m SUPER excited that peaches are now in season! But it was a confusing realization, given, as I mentioned at the beginning, I keep thinking we’re still in March…
Snack:
Here is something I haven’t had in a LONG time, and I don’t know if has ever made it on the blog…a protein brownie. There are tons of recipes out there for these, but I’ll share what I do. 3/4c chocolate protein powder, 1 tablespoon dark cocoa powder, 1 teaspoon baking powder, and water until it is a batter consistency. I microwaved it for 30s, added some chocolate chips, and then for an additional 20s.

What I’ve learned this week is my core has gotten much stronger in some ways…like sit ups and V-ups…and much weaker in others…like apparently my running muscles? My obliques were sore after my 1.5 mile run yesterday, so that was new…
Dinner:
Same as yesterday: balsamic kale, roasted carrots, red pepper hummus, and an egg. Plus a yogurt bar+ a spoon of ice cream for dessert!
Snack:
Since quarantine started, my friends and I have been doing Wednesday nigh Great British Bakeoff Netflix parties and it always makes me sooo hungry! So I snacked on a Cookie protein bar while watching.
