WIAW-Meal Prep Edition

Happy WIAW! As always, a giant thanks to Jenn for hosting this weekly party!

Since starting 12 Days of Christmas, I haven’t gotten to talk about my day to day eats in a while, so let’s dive in, shall we?

The most exciting thing I did before returning to college? Meal prep! I wanted something veggie packed and easy to grab and go, so I made a TON of egg cups-they’re filled with egg, chopped kale or spinach, and cheese-some gouda, some parmesan.

I also made one with cranberry sauce and turkey, if you’re wondering. 

I wanted quick grab and go sweet breakfasts as well, so I made mini versions with egg and blueberries, plus a little cinnamon. The most genius thing I did though was mix up some of my pumpkin starter with egg, and top with cinnamon cream cheese. YUM.

I also made a few with fig balsamic and goat cheese (the bottom ones).

I made an extra batch to freeze as well, since everything was already out! I used the pumpkin starter again but added blueberries.

I’ve also been eating a lot of leftover butternut squash soup, from Thanksgiving. SO GOOD. I top it with cranberry relish and creme fraiche.

Another use of leftovers? On my last night home, we used turkey to make quesadillas with jack cheese, spinach, and mushrooms.

My roommate is seriously the best. She brought back an entire crate of fruit from her trees at home, and it’s like 3 layers deep in persimmons.

Obviously, those have been kind of a staple in my diet lately.

Additionally, the giant plate of asparagus at lunch has returned-I topped them with a fresh herb seasoning mixture, and then nutritional yeast. Plus my turkey egg cup.

Favorite holiday food?

The Best Ever WIAW

Happy Wednesday! One day away from the big day! Let’s get into the celebratory spirit by celebrating food with Jenn.

This is probably the best WIAW I’ve ever had. I’m on vacation in Napa right now, and to say I’ve been eating well is an understatement. I’ve really been embracing balance this trip-I’m not worrying about eating decadent foods, but I’m getting in enough of the good stuff at well that I still feel great, healthy, and happy.

This morning, I slept WAY later than planned. I somehow ended up with a king size bed to myself-I’ve never slept in one before, and I’ll probably never sleep in one again, but it was glorious. Anyways, a later morning meant a light breakfast was necessary before my run, so I had some cranberry bread and blueberries.

I also had a bit of pannetone. We get this every year around Christmas-we don’t exactly like it but we always end up eating it. We got a mini one this year, but it was a bit dry.

Then, it was time for a run! It’s interesting to run in a place I’ve run once every year-I used to think a 3-4 mile loop was crazy long!

I have to make a note about this picture-this is around the spot that I ate pavement a few years ago on a run (luckily I made it through this run in one piece!). The best part? I was running to a restaurant to meet my family for breakfast. My mom snapped this gem of me before she realized I had blood streaming down my leg. Oh, memories.

After cleaning myself up post run, we drove to a small town nearby, St. Helena.

My parents felt lunch was a priority, and after walking through downtown looking at menus, one place in particular place caught our eye. This was SUCH a good choice. My gosh, this was by far the best food I’ve had in a LONG time. We ordered some appetizers to start-grilled artichokes plus brussels sprouts.

These brussels sprouts were mouthwateringly amazing. I have no words. They were by far the best I’ve ever had. They were cooked to perfection, and so, so flavorful. 

For my entree, of course I ordered the avocado salad.

The ingredients were so fresh-all this salad was was fresh mozzarella, tomato, avocado, lettuce, olive oil, and salt and pepper. All the flavors were perfect together.

Then, we stopped at one of our all time favorite places-Woodhouse Chocolate. These candies are amazing-the flavors are just so fresh and spot on. The mint tastes just like a mint leaf. And they’re beautiful as well!

We also tasted some olive oil and picked some out to bring home with us. Then, we stopped in a coffeeshop so I could do some studying. My mom and I both ordered decaf cappuccinos.

The milk foam was good! Not like the amazing cappuccinos I get at school, but a close second, and definitely better than Starbucks!

Before dinner, we stopped in another small town to explore a bit-check out these adorable shops in old train cars!

Then, it was off to dinner at an Italian restaurant that we always go to. We started off with fresh bread and their signature dipping sauce, made with caramelized onions. I haven’t had this much quality olive oil in so long!

For my entree, I ordered the salmon, which came with polenta and steamed spinach. Everything was cooked to perfection. I have to confess, I’m a big salter. But the food this weekend has been just so good and perfectly seasoned that it just doesn’t need anything! It’s amazing to have well cooked flavorful food, a big contrast to dining hall food!

And since it’s vacation, dessert needed to happen. We shared bread pudding with maple rum sauce and a brownie a la mode.

This bread pudding was nearly as good as our family recipe, which is saying a ton! Definitely by far the best restaurant bread pudding I’ve ever had-hot, custardy, with plenty of delicious sauce.

WIAW-And What I Miss Wednesday

Heyyyy happy Wednesday! We’re halfway through the week…although my school work is very end heavy this week so that’ll be interesting…But it also means…time for What I Ate Wednesday! Thanks so much to Jenn for hosting.

Today’s post is going to be a little different…My eats haven’t been crazy exciting lately (thanks #dormlife), so I’ll give you guys an idea of what those are looking like, as well as what’s new with me. Then, I’ll move on to some of my favorite foods from home that I seriously miss eating.

I went on a late night boba run with my sister for some sisterly bonding. This was a jasmine milk tea, and it was phenomenal! I know a lot of people are obsessed with boba around here, but I actually haven’t had it that much. I’ve always liked it when I’ve gotten it though!

This morning I went to a spin class and then ran 3 miles. I had to show you guys a picture though because I <3 this shirt!

And without further ado-here are some of my random dorm eats.

Soo funny story about that egg. I almost made a huge mistake with that egg…in that I grabbed an egg from the fridge, and it felt funny. I kept shaking it, and something felt wrong. But I kept convincing myself nothing was wrong…I finally went back to the fridge to check where I got the egg from…yeah, it was clearly a raw egg. That I was about to throw loose into my backpack.  Whew.

Cottage cheese with pumpkin butter=BEST THING EVER. Seriously-go try it. To kick it up a notch, add sunflower seed butter, cinnamon, or apple chips (pictured below).

Also…there’s an open can of pumpkin pie filling in my fridge right now…a soon to be empty can of pumpkin pie filling. Ok, maybe it’s not the healthiest option, but it has to be healthier than eating an actual pie, right? It’s crustless! (And oh so delicious.)

But here’s the thing. I came back from class STARVING today, so I stuffed my face with pumpkin goodies…less than an hour before Crossfit. This is not a good combination my friends. My stomach was definitely off when I left, and I debated skipping dinner but in the end decided it would probably be best to just eat. Does anyone else have the problem of when their stomach feels off, they overeat because they have trouble telling how full they are? I kinda had that issue. I think I’m really thirsty too…huh.

Also-somehow my dining hall managed to mess up corn on the cob. I mean, come on! How is that possible??

And on that note-here are the things I miss most that I just don’t have access to anymore. Cue the violins.

Confession: after looking through my food pictures from the summer, I’ve concluded that a lot of the things I miss so much I could easily eat…if I planned ahead a little and wasn’t so darn lazy! I miss my smoothies so much…so I should just deal with the pain of cleaning my blender, and actually make ice cubes. There are a lot of salads that were so delicious I enjoyed this summer-and with a little planning, I can easily have all the ingredient necessary. Wow, this post ended up being pretty educational to me! That’s all I have for you today-have a great Wednesday!

WIAW and Relearning to Run

Happy Wednesday! I’m dead tired and I’m staying up to write this post, but I simply couldn’t miss WIAW. I just finished marathon Chem and Physics problem sets so let’s hope this post is at least kind of coherent. Thanks Jenn!

This WIAW is a collection of a ton of random shots I took of my food. I think it pretty accurately describes my eating right now. #dormlife

Before I get into that, I wanted to talk about this morning’s workout. I took a 45 minute spin class, and then went our for  a 4 mile training run. I had some…technical difficulties. It’s never good when your shoes don’t finish in the same state they began.

I got new inserts to in theory help with my foot problems. Do they help? Maybe? At least on shorter runs? My feet still stunk on my 12 miler. Well, there’s one little problem. Well, 2. A) I don’t own enough anti-blister socks so I need to save them for the longest runs and B) these inserts rub like crazy. After 2 miles, I couldn’t stand the intense burning on one foot, so I stopped and ran the rest of the way with the insert in my hand. The blister pain went away, but I had kind of a strange experience. I really concentrated on running correctly. I’ve done a ton of agility/sprinting training, so I know how to run. And my sprinting run is not at all like my distance run in terms of how I strike with my feet. I was being really careful to strike with my foot in a better position (just one foot…baby steps), and guess what? No foot pain. The motion was a lot different though, and my heel was burning like crazy by the end of the run. I think the only way to solve my foot issues is by relearning to run. After my race, I’m going to really work on it, which will involve a lot of barefoot running.

Leftover salad and foccacia. The salad is from the Cheesecake Factory-my friend invited me to dinner there with her grandparents Sunday night. I actually really liked this salad! Perfect leftover.

I was craving pumpkin (no surprise there) so I threw a bunch of things in the microwave in hopes of something similar to the amazing pumpkin microwave cake we made. It didn’t really come out at all like that, but it tasted just like pumpkin pie so I’m not complaining.

My newest obsession-apple chips. And yesterday/today I was pretty much out of food so it was apple chips for breakfast, lunch, and dinner. I kid. Sort of…

A solid dining hall dinner post-Crossfit. The dill salmon was actually really good-normally dining hall salmon is pretty gross.

You know I’m out of food when…I break into my freezer supply of quick bread. This is zucchini bread-a study snack.

Post workout drink with a side of college life-that mess on my desk is what I have to deal with constantly. There is zero space in my room, if you’re wondering why a lot of pictures are of me holding food, not on a table or desk. And FYI-it’s not a good habit to get into to just plop your food down on TOP of everything…laptop included…

I was about to just grab a bar for breakfast, but I decided I should have something at least a little more real. The last of my cinnamon apple blueberry bread from who knows when in the freezer! Yum!

It’s all about balance my friends. And by that-of course I mean the balance of chocolate and vanilla. Kidding. But I’ll talk about the actual balance I’m referring to at the end.

Since I was crazy low on food and I saw some posts about all the amazing pumpkin things at Trader Joe’s, I HAD TO GO NOW. Despite the crazy amount of work I had today. Study fuel…right??

Dinner was some veggie soup from the freezer, plus some new purchases. Edamame crackers topped with pumpkin cream cheese!

GUYS. This pumpkin cream cheese is BOMB. It’s not too sweet either-that surprised me! It’s not going to last until the weekend. There’s no way.

I also got these because, I mean, come on, how cool is this? Honestly though, I wasn’t a fan. They were a bit dry and sweet for my taste. Better topped with pumpkin cream cheese. Sensing a theme here?

Today was also the night of our guac party. It was honestly a much needed brain break. Yesterday held hours of work, including late night work and an early morning.Image

Speaking on study snacks…apple chips+pumpkin cream cheese? YUM. If that doesn’t say fall, what does? Are you sensing WHY this cream cheese won’t be around much longer?

And onto the whole balance thing…I feel like my eating habits are starting to slip. Mostly I’m just not feeling as great. Late nights are not helping when I have a snack because I’m up late working. I’m making a 30 day challenge for myself-only eat pumpkin. Not literally-only eat sweets if they involve pumpkin. That way, I won’t eat something that will make me feel bad unless it’s seasonal and really worth it. That’s a balance I can live with. And hopefully some sleep, coffee, and fresh groceries can get me right back on track.

WIAW #dormlife

Happy Wednesday! As we all know, that means it’s time for the fabulous party hosted by Jenn.

This is my first WIAW from college. First, let me just state that I hate the furniture in my room this year. It’s dark and small and immovable. So basically it’s impossible to stay organized. So I’m blogging from my headboard-less bed next to a giant pile of books that travels from my desk chair to my bed regularly because my desk and shelves are full. Such is life.

But let’s get on to the day of eats. Today was an example of both how college life doesn’t have to be unhealthy, and how it can be unhealthy.

I started my morning with a few dates pre-run. I had a 4 mile run scheduled today, and decided to do speedwork. I ran a mile of warm up and cool down(half a mile to the track, half a mile on the track). I then did 400 repeats for 2 miles. I haven’t really done these before, but they seemed perfect given all my recent foot issues. Having rest time was crucial for my foot and it actually felt really good. I liked these, but I think I prefer the 200 distance way more. 

Post run, it was breakfast time. I think this here is an example of how hard I tried to make dorm food look pretty/interesting. Plus, you all can admire my new dorm pet (aka my plant).

I am well stocked on fruit right now since I only just got here, and it’s a lifesaver. Unripe melon gets old fast.

I had one class this morning before eating some food I packed. The original plan was a salad with a hardboiled egg, but there wasn’t much left in the dining hall last night, and I was at a loss for dressing.

Plus the lettuce looked kind of old, so I tossed it in favor of some of the veggies from my fridge.

After my Physics lab, I headed to one of my favorite places to eat on campus for some mystery bread. This stuff is so good-oh how I missed it!

So why, you ask, is this one of my favorite places on campus? They have the most amazing selection of quick breads and baked goods. I pretty much always stick to the same thing since I love it, but I’m sure something pumpkin will have to happen soon.

Today was a pretty snacky day. Besides what’s shown, I also had a Thinkthin bar, dried mango, multiple types of cake….more on that in a minute.

I went back to Crossfit tonight. I did like it better-that could be because the WOD had rowing, and any WOD with rowing has my heart. It was rowing+thrusters+pull ups. Hopefully in time this new box will feel like home, but it’s just not the same as my old one. 

Dinner tonight was a little different-I passed on the gross looking salad this time and went for other random veggies instead.

Grilled chicken, a taste of mashed potatoes, some type of Greekish salad, and citrus beets. Not going to lie, my expectations were way too high for those beets. But hey, dining hall food isn’t really supposed to have flavor, right?

I was all set to type up this post when I got a call from my sister. She and her boyfriend are training for a marathon, and they had just finished their 18 mile run….miles away from their apartment. Being the nice person that I am, I picked them up in my tiny car. (I usually say my car seats 2, or 2+3 others with no legs.)

Despite the little detour in my night, I did score some groceries.

While tonight I haven’t accomplished as much as I might have liked, I finish class at 12 tomorrow and have allll day to spend in the library. 

I feel like it is definitely possible to eat well in college, but it does take some discipline. Today I started to fall back into old habits a little bit. I guess one thing to consider is that it is okay to indulge occasionally, but you need to pick and choose, and other delicious things may come up later in the night (like pumpkin cake-not passing that one up). One big thing for me this year is I’ve avoided the dining hall for breakfasts, and I’ve packed lunches. As for breakfast-it’s just too hard for me to pass up pancakes and muffins everyday, and I know they make me feel awful. I’d rather keep food in my room and start the day off on the right food. As for lunches-last year I got in the habit of buying, but the serving size was almost always too large, and I felt bad throwing stuff away. Plus, it’s easier to pack something cleaner. 

So that’s that-my first few days back! I promise to try and keep my pictures interesting, even if that means buying a lot more plants. Or a puppy.
