Full Day of Eating on a Study Day

I want to do more full days of eating again, so I figured I’d pop in super fast for one (on commercials during the Giant’s game) from today, which was a weekend study day (similar to most of my weekends hah).

Breakfast:

Mango+ double chocolate might muffin.

Workout: Crossfit. We did 21 minutes of 5 pull ups, 10 push ups, and 15 pull ups with 100m run every 3 minutes. My pull ups felt super strong so I guess the work I’ve been doing on them lately has been paying off!

Lunch:

Panera half Fuji apple chicken salad. I spent a little time there studying (and charging my iPad). Funny story, yesterday I lost my iPad pencil (they are NOT cheap) and spent forever looking for it. It was a weird situation because I knew exactly where I had last seen it…putting it into my backpack. After searching every inch of my house, I ended up finding it in the parking lot at school, just lying on the ground where I parked. It must have fallen out and rolled under my car. It was mostly unscathed, thankfully. My iPad is my life so this was a relief!

Dessert:

I was walking to a coffeeshop to study when I passed people eating ice cream outside at Baskin Robbins, and it seemed like a really good idea. It was. Gold medal ribbon is a childhood favorite. I spent some time studying outside there and it was really nice! This past week it’s been in the 80s, and beautiful!

Snack:

I came home to a very special package.

Cheerios sent me their new seasonal peach Cheerios! To say I was excited was an understatement; I’ve actually been even more into Cheerios lately. Like I go through a box a week between pre-workout meals in the mornings and evening snacks. This made my day. They’re SO good. I have yet to see them in stores out here!

Dinner:

Super simple hash/scramble. Half of a baked sweet potato with 1 whole egg and some egg whites, spinach, and fancy cheese that was a gift from my parents. My favorite is the manchego, but this was a really good swiss-tasting one. YUM.

Full Day of Eating: First Day of Fall!

Hello friends! It’s been a while, hasn’t it?

It’s been a WILD week. I have a TON of pup adventures to share, but for now, I have a test tomorrow so I’m just going to bust out a quick fall day of eating as a little study break.

Rina even has her fall look going on with the pumpkin-colored bow:

Pre-Workout:

You know it. I love this flavor of Cheerio in general, and was eating them way into the new year this year thanks to ordering a few boxes at the end of the season.

Workout: I wasn’t feeling the Crossfit WOD. Plus I’ve been doing CF a lot lately and wanted something a little different. I’m still doing my squat program, and with the influx of undergrads to campus this weekend, I figured going early on a weekday morning to the campus gym to try and get a squat rack would be wise.

Lunch:

I had a 3 hour gap around lunch time and was SO tired. I debated napping, but I really needed to study so I went the caffeine route. I got a small black tea, and only drank half of it but got the buzz I needed! (I’m super caffeine sensitive.)

My actual meal was a fig and goat cheese salad with deli turkey, plus BBQ rice cakes.

I made a salad with dried cranberries, parmesan, roasted sweet potato, and a balsamic drizzle. On the side, I had Trader Joe’s BBQ pulled chicken.

WIAW: In Vet School!

Hello from vet school! Here we have a rare mid-week post. That being said, it’s going to be a quick one. So why not do a WIAW for what I ate in a day, during my second week of vet school?

My morning started EARLY. My alarm went off at 5am, and Rina didn’t look like she was any more interested in getting up than I did. Often times she’s roaming around during the early hours, but I guess this was too early for my sleepy (loud) kitty!

Before running out the door, I grabbed a handful of berry Cheerios.

I went to 5:45am Crossfit and it was a really tough one. We worked on some core strength, and then did a surprisingly difficult WOD. It was 5 rounds of a 3 minute AMRAP of power cleans, push jerks, and over the bar burpees, with a minute rest between rounds. I was DONE.

After quickly showering, I put a GF pumpkin spice waffle in the toaster, and then ate that while making the rest of my breakfast. That workout called for some serious post-workout carbs,

Part 2 was a yogurt bowl with plain Greek yogurt, a nectarine, and sunbutter. Plus TONS of fluids. It’s been warm here for sure!

For lunch, I packed a salad with nectarine, creamy goat cheese, and Trader Joe’s grilled lemon pepper chicken. Plus Quest chips, and a couple chocolates from a classmate.

Today was 8-5 of sitting in lectures all day. For mid-lecture snack, I had a bar.

As I’ve been mentioning before, I have a massive amount of zucchini. I took a couple of large zucchinis and spiralized them, and then sautéed them with garlic, salt, and pepper. I topped all that with marinara, more of the grilled chicken, and mozzarella. I munched on some snap pea crisps and dried mango while cooking.

For dessert, I had fresh mango, one honey mint (I changed my mint about the other one), and half a piece of peppermint bark bread from the freezer.

That’s probably it for food for the night. I might have kombucha later. Now I have to go do some research to prep for another full day tomorrow!

Full Day of Eating: 101 Ways to Eat Zucchini

I’m currently blogging from the coffeeshop that I will basically be living in over the next 4 years, sipping on a decaf iced latte and eating a GF lemon lavender muffin. YES.

Since I have some time on my hands today and tomorrow, I figured I might as well do another full day of eating! My life is going to get crazy starting Monday. I want to still blog during vet school, but I recognize that school is my priority so I will definitely be blogging less. My goal is 1 post/week. We shall see. In the meantime, I’ll have a couple of posts scheduled to go up next week 🙂

The theme this week is 101 ways to eat zucchini. As i mentioned before, I have a massive amount of zucchini. Not part of my full day of eating, but the other day I made some zucchini fritters, served with shredded zucchini and corn salad. For the fritters, I grated up 2 large zucchinis, realized it was a massive amount and pulled some out for the salad, then squeezed out excess liquid and mixed in garlic and onion powder, salt and pepper, chopped chives, nutritional yeast, and egg whites.

I served them with applesauce, creamy goat cheese, and ketchup.

Also, if you’re wondering what my current day to day is like, it’s mostly spending time with this one:

She’s gotten better at actually, you know, sleeping during the night.

But back to the FDOE.

This is from Friday! I wanted to do morning Crossfit instead of evening, and for some reason I was thinking I’d have to do 5:45am. Then remembered that I’m not at my home box and there are lots more options, like 9:30am! I love that, even though I’ll probably never be able to do it during school.

Breakfast:

Fruit stand peach+sunbutter on GF toast. I got GF bread that wasn’t frozen this time, and the quality of my toast is WAY better than thawing it from frozen!

Crossfit was deadlifts plus a quick WOD that included lots of cleans and a little running. We did a warm up of relays on the assault bike, and I was a little too excited to hop on that I didn’t get my leg up high enough and scraped my leg on the base of the seat…whoops.

Right after Crossfit, I hit up the grocery store and picked up stuff for a potluck tonight, plus some staples and a protein bar, that I broke into.

Afterwards, I made a lighter lunch since I had just eaten a protein bar. Avocado toast and a kale salad with lemon juice, cooking spray, garlic powder, nutritional yeast, and salt and pepper. Love this simple salad.

Afternoon snack: GF frozen pumpkin spice muffin with butter.

I wasn’t super hungry for dinner, so I made a zucchini scramble that came out really well! Zucchini, egg whites, and garlic and herb alouette spreadable cheese. Plus half a piece of GF toast with butter.

For dessert, I made a couple of flapjacked protein cookies and ate them with vanilla halo top.

That evening, I met some vet students for beers. I think the consensus is that we’re all excited but nervous for Monday! When I got back, I had a snack of red, white, and blue banana bread from the freezer. It looks sad because when I was reheating it, I flipped it over and that was a fail.

Full Day of Eating|Sunbasket Fun

Hi friends! Halfway through actually taking a few pictures, I thought I would share a full day of eating from yesterday! I feel like sometimes my meals get repetitive, but it’s been a little while, so let’s do it!

Pre-Crossfit: Pumpkin Spice Cheerios, as per usual.

Crossfit was squats on squats. We did our 20 rep sets of back squats (130 for me) and presses, and then the following WOD: 21-18-15-12-9-6-3 overhead squats (55#) and push-ups, with 20 double unders after each round.

Breakfast:

Protein smoothie/shake/whatever you want to call it. 1 frozen banana, 1/3c milk (to keep it nice and thick), 1/3 packet of Quest chocolate milkshake protein powder (I like Quest because I can buy small packets; I don’t go through protein powder quickly), cocoa powder.

Coffee: I went to Peet’s to work on Microbio before the library opened because I was up and at ’em early. This latte was inferior to last week’s.

Lunch:

Leftover spinach and goat cheese bisque+GF cheddar crackers (Milton’s). This was not enough food and/or protein….

I was considering running that afternoon but instead went home for more food. I tried cinnamon chex and had some leftover meatballs for protein.

Snack:

It was cold/stormy/yucky out so I wanted a warm snack instead of just a bar! I had a Flapjacked muffin. YUM.

The key is to undercook them a little bit; they taste like lava cake!

Dinner:

My college roommate stopped by for a few hours on her way to the airport, so we made a Sunbasket meal together! We made Barcelona Chicken with a Meyer lemon olive sauce. We started by splitting a beer 3 ways with my mom.

This was a good one! I do wish there were more vegetables though.

Dessert:

My decided to meet up with another college friend for hot chocolate. The closest place to where she lives is Whole Foods, but sadly their hot drinks bar was already closed. Instead, we went home with some peppermint marshmallows (SO delicious) and made hot chocolate ourselves.

It was so great to see everyone and catch up!

Now, I’m off to get ready to teach a couple of spin classes today! I just made my playlist and it is FIRE. My playlists are always best after a little break from teaching!
