WIAW—Valentine’s Day!

Happy Wednesday! I hope everyone had a fabulous Valentine’s Day! I spent some quality time with my cat so no complaints here. (Also, Cooking Light had an article for how to make Valentine’s Day dinner for yourself and your feline…) I thought it would be fun to do this week’s WIAW (thanks Jenn) on what I ate on Valentine’s Day!

Lunch: I met my parents at a Venezuelan cafe on campus after teaching. We had an appetizer of what I think was a cheese filled corn-based empanada, with cilantro avocado dip.

My parents came early for a class of wine, so the food showed up just when I got there! My mom and I split a Gouda arepa and a salad with avocado, kalmata olives, asparagus, chicken, Gouda, and balsamic (the salad my CA Chopped Salad is based off of).

The Weekend and Beyond

Whelp, it’s officially that point in the quarter. Over the past week I’ve had to write a couple of scientific research papers (surprisingly fun and interesting) and just took a midterm today. I finally feel I have some relief! Despite all that, I still had an awesome Valentine’s Day weekend. I’m going to to a sentence per picture recap (pretty sure I’ve never done this before, but why not?). Also—apparently I love experimenting on myself. I think I actually just love the scientific process, but whatever. Anyways, details tomorrow on a new experiment!

Saturday I had a chocolate tasting event with my dorm and then dragged my sister out (with the condition she could wear pajamas); the night included meeting new people, seeing kitties, and a cat ear cleaning #vettech.

The stars aligned for my schedule on Sunday; spin class at my favorite studio then a cupcake pickup, then lunch with some of my high school besties!

I stole GF cornbread from the freezer at home and have been eating it all week with a touch of butter and honey; side of tomato soup with cheddar (the best way to eat tomato soup!)

Little cupcake mishap in the car but cupcakes escaped relatively unscathed; Valentine’s sampler included coconut chocolate, chocolate cream, caramel chocolate, red velvet, chocolate raspberry, and white chocolate passionfruit.

I threw a Valentine’s Day party for my friends on Sunday night and it was awesome; the spread included English cheddar and 1000 day aged gouda from TJ’s, crackers, and cupcakes.

Luna has a new formula and I strongly dislike it, especially the S’mores (the lemon seemed ok and I haven’t tried the others) so I’m trying to stock up!

Whole Foods green smoothie post-80 degree noon Crossfit was perfect and necessary; the workout included lots of back squats which luckily I am getting less sore from each week.

Sometimes I’m so classy I can’t handle myself. Breakfast was yogurt in a jar because I had a jar to use and we were out of bowls. Lunch in a can because I didn’t have anything else to store it in.

I tried this for the first time and like it better than the other flavors. It’s growing on me but needs some salt; better alone because it’s a milder flavor overpowered by yogurt! I’m still partial to my farmer’s market gourmet sun butters though.

The Grad School of Business arguable has the best food on campus, and I had some awesome chicken mushroom chowder. Also exciting, but right before lunch I successfully gave a mouse an IV injection!

I like Italian food way better without pasta I’m learning. Tons os delicious homemade sauce over greens, with plenty of cheese. I added a meatball after the picture.

New favorite way to eat bananas: once they get speckled I won’t eat them plain, but they’re awesome microwaved and served with a pool of chocolate butterscotch sunbutter! Eaten post semi-soggy run. I hit my paces at least!

Food as of Late

Hey guys! I hope everyone had a fantastic Valentine’s Day! I apologize for the radio silence lately. I haven’t been feeling very good lately, so I haven’t been feeling the blog!

I don’t know why I’ve been feeling bad-I think something I’m eating is making me sick, but I don’t know what, and if I don’t eat the exact right thing at the right time in the right amount, I feel sick. And I don’t know what the right thing, time, or amount is. I’ve mostly felt better the last couple of days but it feels kind of rocky. It’s just really frustrating!

On that lovely note, I have some pictures of food! Yay!

For Valentine’s Day….I was working. I’m not sure if I mentioned this, but I recently started working at a vet. It’s a lot of fun!

This is Thursday morning’s breakfast. I do track workouts on Thursday mornings, and since the track is on the opposite side of campus, I went to a different dining hall for breakfast! They have far superior pancakes. That scrambled egg looking mixture is actually scrambled tofu!

Happy Valentine’s Day and Some Women’s Health

Happy Valentine’s Day everybody! I’m pretty sure this guy is my valentine:

I slept 9 hours last night, but I’m definitely still recovering from the previous night, so this was pretty awesome. 

I’m pretty sure Valentine’s Day is a good excuse to eat cookies as pre-run fuel, right?

These were a Valentine’s gram-one from my roomie and the other from my favorite K-pop star. Yeah, I didn’t know I had one either. 

I decided to be over the top pink today because I’m pretty sure I’ve never actually worn this sweater, and it’s just too perfect for Valentine’s day. I guess pink isn’t really my color which is why I haven’t worn it much!

For this morning’s run, I did my 50 minute treadmill workout. I took it kind of easy though-I woke up sore and tired-so I didn’t do any of it at 1.0 incline, and it actually felt fairly easy!

I also made some awesome scrambled eggs this morning. With goat gouda <3

After class (more on that in a minute) I experimented with popcorn and my new chocolate making skill-chocolate coated popcorn!

Not the biggest winner though-the popcorn wasn’t very salty on it’s own, and I made with chocolate with just maple syrup, nonfat milk, and cacao powder.

And besides Valentine’s candy, I did eat some veggies! I really liked this Trader Joe’s salad!

Now onto Valentine’s day. I know some people get sad/depressed being single on Valentine’s day but it really doesn’t bother me. I mean come on-either way, this is a chocolate holiday! Priorities, people! Last Valentine’s day, I had a 6k test (rowing) and then went to the beach with my rowing team. 

In terms of Valentine’s I’ve given out, my favorite thing of the past when I was less busy/had better access to a kitchen for the holidays was M&M cookies. I used a chocolate chip cookie recipe, and then replaced the chips with holiday M&Ms of choice. They were always a big hit, and definitely one of my all time favorite cookies! Sadly, that was wayyy pre blog so I have no pictures…

AND in the spirit of Valentine’s day, I’ve decided to share a little story with you all. I don’t usually talk about this aspect of my personal life on here, but I thought you guys would get a kick out of the awkwardness of a high school relationship. 

In high school, I ended up “going out” with a guy I really didn’t know much probably less than a week before Valentine’s day. So that was one of the most awkward Valentine’s days of my life. I had no idea what the proper etiquette was for something like this (I ended up making the perviously mentioned cookies). The worst part was that every year in the Spanish class I was in, the students make super cheesy, super silly valentines and plant them throughout the school. My new boyfriend was in the same spanish class, so I ended up making a ridiculous one for him. But he didn’t know enough Spanish to understand it, and when I explained it, he just flat out didn’t get it or apparently my sense of humor. “I think your socks are cute” is a lot less romantic in English….ohhh high school relationships. Let’s just say that one was destined for failure.

Also, since today is basically about chocolate (let’s be real here), here’s a video my sister made a couple of years ago. Has anyone heard of epic mealtime? She made a vegan chocolate mountain parody. In summary, no one was strong enough to lift it…

Aaaand now I’ve started myself on listening to Spanish music. Best way to spend Valentine’s day! 🙂 I can’t wait to take Spanish again next quarter!

Speaking of academic curiosity-I freaking love Biochem. I love metabolism, but I also love the endocrine system and hormones. One thing we discussed today that I thought might be of interest to some of you was this particular process:

A testosterone hormone, androgen, needs to be converted into estrogen for a healthy reproductive system. An enzyme in fat cells does this conversion. So when the body is stressed (aka starving), fat cells are depleted, hence the loss of cycle. My professor also mentioned that in many people, running 45-50 miles a week will do this (although I can’t verify this and I’m sure it varies person to person). Another interesting thing is that this number applies to males as well-this type of mileage will actually result in lower sperm count. Who knew? 

Also, another totally random and interesting fact-lactation is actually a very strong contraceptive (hormones)-and in hunter gatherer populations, it is common for women to get pregnant about every 5 years (because the children breastfeed for a very long time). Even more interesting-this timing means that a woman may only get 6-8 periods in her life. And apparently there are study linking this to lower rates of certain reproductive organ related diseases later in life. Totally random, but I thought it was interesting!

Happy Valentine’s Day everybody! Is anybody doing anything special? I have a dinner with “39 of my sisters” as my coach likes to say. Instead of our usual on the water afternoon practice, we’re heading out to the beach for a run and then a team dinner. It’s always nice to get a break from the routine! 

Long time no post though, right? I have tons of food to catch you guys up on, so I’ll just go over some highlights here in a minute. But first. Why haven’t I been posting? SO much work this week! Why does it feel like every week is such a hard week? Oh, that’s right, ROWING. Also, I haven’t exactly felt like posting because, well, I haven’t really been eating too well. And then this wouldn’t be a “healthy living blog,” it would just be a food blog, or, a junk food blog. To be perfectly honest, I’ve had a lot of difficulty eating well since the holidays. It’s been really hard for me to get back on track! And lack of sleep definitely isn’t helping matters…Does anyone have any tips for getting back on track? I’ve currently ditched all sweet items in my dorm room, as well as (most) nuts. 

So how are my allergies? My skin was clearing way up…but here’s the weird thing. I replaced the nuts in my diet for a ton of coconut (yeah, I know, not the best strategy…) and my skin went downhill again. So what am I allergic to? This is really odd. I broke down yesterday and had a granola bar as well, so that probably doesn’t help matters….

Being the awesome person that I am, I wanted to do a little test for my allergies that I was pretty sure wouldn’t work (it didn’t). I put a little coconut butter on one side of my face, and a little peanut butter on the other side. I wanted to see if it would cause a breakout. It didn’t. But it was only on for like an hour (yes, I walked around with pb on my face for an hour…I’m pretty cool) and I didn’t really expect to see many results. 

Ok, I will go through all the food in a bit (I don’t have my connector cable with me now, I’m between classes), but first let’s talk about this morning. I had a 6k test! For those of you who do not know, this is the most painful thing in rowing. It is basically 6000 meters on the rowing machine at an all out effort. This was only my 3rd 6k test, and I was really expecting to see a lot of improvement in my time and PR. Unfortunately, that didn’t happen, which I was pretty disappointed about, Given the fact that I’m fairly new to rowing, I really should be PRing more. My fastest 6k was my first one! At least this was faster than my last one, but still, it’s frustrating. This does make me wonder though; if I had better nutrition, would I have been able to PR? To be perfectly honest, I put on some weight since my first 6k test, and I’m thinking this could be seriously slowing me down. So now I have a new motivation to eat well! And I have a new plan. I have the tendency to reward myself with sweets: for doing something well, for a hard workout, for a good grade. So my new idea is to reward myself with peanut butter. That way, I will get to enjoy a reasonable amount of peanut butter and still feel like I’ve gotten that little reward. So instead of waffles, I can have a scoop of peanut butter on my oatmeal! This morning after my 6k? I made my favorite ever smoothie! Peanut butter and banana! Sidenote: I know that you’re supposed to remove the banana peel before freezing bananas. I just never thought about why. I was planning on this smoothie post workout so I popped a banana in the freezer last night so it would be really awesome. But I was in a hurry and just tossed the whole thing in. Yeahh that was not the best idea. In case anyone is curious, the reason it is bad is because it is impossible to peel (you probably figured this out). However, I was very determined. I wanted my smoothie, dang it! So I persevered. Here’s the recipe, it’s super simple!

 

Peanut Butter Banana Smoothie

1 frozen banana 

1/2 c skim milk (or more if your blender is not powerful enough to blend)

1-2 T peanut butter to taste

 

  1. Add to a blender (break up the banana as much as possible for easier blending).
  2. Blend. Enjoy

 

So simple! The longer you blend it, the fluffier it gets! I don’t think I’d ever had one of these smoothies with a freshly frozen banana before, so it was extra frosty!

 

Well, this is a great transition into the food portion! Before my erg test, I had a slice of Banana Bread and a little milk. 

After, to go along with my smoothie, I had half a whole wheat english muffin with cream cheese and egg scramble/egg whites. Plus like 1/3 of a pancake with syrup. I didn’t take a picture of this because my plate didn’t look very good. After my banana massacre…

But I did get some pictures of lunch! I ate an early lunch (around 11) because I was getting a little hungry, and my legs were starting to burn from this morning. Plus, who can sit in a cafe and work with food that close? 

I decided on a chicken pesto sandwich, plus a bran muffin. I figured the bran muffin was a little treat, but definitely a step up nutritionally from last week’s giant apple fritter. Plus, it would not make me feel gross, especially on a 60 minute run!

No picture from dinner though! The beach run with my team was fun (well, as fun as running on sand can be…), but I ended up getting my feet and therefore running shoes soaked and sandy! So much for a Friday run! Our coaches brought us chocolate and apple cider for a toast post-workout at the beach before we headed out to dinner. 

Dinner was a fun experience but the restaurant was frustrating. It was a seafood place, and they were out of every fish except for maybe one kind, as well as steak, and garlic bread. Plus, they ended up messing up our order, such that my table got our food at least half an hour after the other table. Luckily, I had nothing to rush back to do! I enjoyed a chicken casaer salad. 

Back at my dorm, I went to Late-Night Dining with my friend to get a warm, gooey giant cookie. We have meal plan dollars that come with our weekly meal plan, which let you buy things from other places, like late night. I almost never go to late night, which is where most people use them up (yeahhh morning practice!). The quarter is already more than half over, and only a small portion of the meal plan dollars carry over. I realized I could buy 97 more giant cookies this quarter! That’s over 3 a night! Yesss. Haha, don’t worry, I won’t do that! But finally, let’s play catch-up on food!

ImageOk, I need to comment on this one. This was one of the best ideas I’ve ever had. Like ever. I brought back some fresh tomato salsa from Saturday’s Mexican brunch in a tubberware, and I had the genius idea to mix it with some salt, pepper, and avocado! This is seriously the best guacamole I’ve ever had. I ate it with celery sticks. I’ve made this multiple times and just cannot get over it. At home, whenever we would get fresh salsa, we would never finish it. Ohh how naive I was. This mixture is awesome, and super easy! ImageThis is my banana mix with regular cocoa powder, instead of dark cocoa powder. It is completely different! Maybe fruittier? Topped with unsweetened coconut.Image

These are the coconut truffles I made the other day. Yes, I was too lazy to actually make them balls. All they have in them is coconut (unsweetened), baker’s chocolate, coconut oil, and then they are rolled in cocoa powder. I actually started eating these in the morning before my workouts in hopes the caffeine in the chocolate would wake me up a little bit!ImageThe biggest reason for this photo dump is that I seriously was planning on blogging, so I took the pictures, and I don’t want them to go to waste!Image

Another attempt at a healthy mug cake. This one actually worked out, but for some reason it exploded from the bottom…getting mug cake ALLLL over the microwave. This had banana, liquid egg whites, vanilla protein powder, cocoa powder, whole wheat pastry flower, a bit of dextrose, and some of my crumbled up truffles as chocolate chips. Not bad! I actually made this one other time, and it was pretty good as well! It would be 1000x better with real chocolate chips. Image
