I don’t like protein bars very much and I can’t always whip out the blender so the muffins help a lot (they were a lifesaver when I was stuck in a hotel room for two weeks with only a fridge and a microwave, and horrible catered meals.) I’ve found the trick is to not try and put them back in the microwave if they’re not quite done when you take them out. Instead, cover the top with a plate and let the steam finish the rest.
