Super Quick and Easy Salads

So I started typing up another post, but I recently updated my computer and my iPhoto is going a little bit crazy so I decided to pause that for a moment and switch gears. I have a couple of favorite go-to quick and easy salads that I have SO frequently. In school, I would always have the same one of weekends (which you’ve seen 1000x). Since coming to Nashville, I’ve discovered a few variations on the theme and wanted to share! The key to these salads is to chop all the ingredients up. I put everything in a bowl and then use kitchen scissors to get smaller pieces. I also love these salads because it’s easy to have the ingredients lying around in the fridge. I typically have them always on hand. Also, I know most people don’t love American cheese but you could use any cheese!

The Classic:

I realize this is one that most people out there wouldn’t eat, but I love it. But bear with me for the other two!

1 container of Holy Guacamole

Deli Turkey

American cheese

Lettuce

Ketchup

Again, I eat this meal more than anything else. So I was happy to find a couple of delicious variations to mix it up!

Salsa Ranch:

Deli Turkey

American Cheese

Lettuce

Salsa Ranch dressing (I used Bolthouse Farms salsa ranch and it’s super good! You could always mix actual salsa and actual ranch dressing to get this.)

BBQ Ranch

Deli turkey

American Cheese

Lettuce

Bolthouse Farms Ranch

BBQ Sauce

Cheeseburger Salad

Here’s another quick and easy recipe idea for you guys! This one is a great one for me because I feel a lot more comfortable cooking ground meat than pieces of meat.

I’m a fan of lettuce wrapped turkey burgers as it is, so I thought this could be a fun new way to get my burger fix! My mom was quite skeptical of this dinner idea to start, but ended up loving it!

IMG_4451

This was so easy to make, I was able to sip on home brew and get everything together before the MLB All-Star game started.

IMG_4448 IMG_4449 IMG_4452

The dressing is a healthy, greek yogurt based thousand island that impressed us all. One part ketchup, one part 2% plain Greek yogurt. Then season with garlic powder, onion powder, and salt and pepper to taste. Toss the salad with dressing, lettuce, tomatoes, and whatever you favorite burger toppings are!

I sautéed lean ground turkey with a ton of spices: salt and pepper, garlic and herb Mrs. Dash, a chicken seasoning blend, onion powder, and garlic powder. Basically, choose your favorite spices such that the turkey actually tastes like something! Then, just place the turkey on top of the veggies, and top with cheese of choice. I’m definitely an American cheese on burger girl, and I found an actually really nice organic American cheese.

We served our salads with roasted corn rolled in garlic powder and grated parmesan.

IMG_4450

Yum!

Also, if you’re too lazy to make dressing, this is also super delicious with pre-made guacamole as dressing.

For dessert, I made a brownie sundae with a warm flax brownie, vanilla Halo Top, fudge sauce, and whipped cream.

Happy eating!

How do you like your burgers?

Quick and Easy Mexican Stuffed Sweet Potatoes

Hello! I have a day of eats to share, along with another Quick and Easy recipe at the end!

…I think this is from Monday? Days are hard to keep track of!

Breakfast:

IMG_4123

Papaya and lemon poppyseed bread (Buzzfeed’s recipe).

Lunch:

IMG_4124

Open faced turkey sandwich with garlic and herb laughing cow, lettuce, and avocado. Pirate’s Booty and snap peas on the side.

Snack:

IMG_4125

Half a frozen banana and a chocolate mint Nugo bar.

Dinner:

Mexican stuffed sweet potatoes! These came together in minutes. We roasted the sweet potatoes, but you could definitely just microwave them to make it faster (which is what I will probably do when I am in school). Assembling them takes almost no time. Cut them open, add some salt and pepper, and then layer in wilted spinach (also microwaved), rotisserie chicken (or any cooked meat, or even black beans), salsa, and Mexican cheese.

IMG_4126

Then, broil them in the oven or microwave them until the cheese is melted. Top with guacamole, and you’re good to go!

IMG_4127

Dessert:

IMG_4128

Black cherry Halo Top with dark chocolate sauce and whipped cream.

Snack:

IMG_4129

Brown rice cake with whipped berry cream cheese.

As far as workouts go, I decided that this week, I’m going to do a weekly workouts recap post at the end of the week! It’s been a while since I’ve done that!

Also, vet school is rapidly approaching and I have a long list of Quick and Easy posts I need to do, so expect a lot of those coming up soon!

WIAW: Quick and Easy Miso Noodle Soup

Woo! Two WIAW in a row! (Thanks Jenn.)

wiawphotobutton-1

I have a Memorial Day recap coming shortly, but for now, let’s dive into my eats post-long weekend. I don’t know about anybody else, but I definitely was dragging Tuesday morning! Luckily once I got to work and got back into the swing of things, I think I managed to shake off the funk! Without further ado, here we go!

Breakfast: I was planning on having maple blueberry bread, but since I slept in a little, I woke up hungry and wanted more protein. Cue a flapjacked muffin! Plus an apple on the side.

IMG_3815

Although I wasn’t crazy sore from Memorial Day Murph (recap coming soon), I felt tired so I decided to sleep in a bit and hit up a yoga class, since I started work later. I went early for 15 minutes of abs, and then got the stretch I needed in!

Lunch 1: I forgot to take a picture because I found myself running super late packing my lunch in the morning, but I had a protein smoothie. 1/2 a packet of flapjacked chocolate smoothie mix, 1 cup of milk, and half a cup of frozen blueberries. I usually use a little less milk, but more milk made this far easier to drink! This smoothie is seriously a lifesaver, that makes me a significantly better person, and significantly better at my job. Having lunch 1 at normal lunchtime makes it easy to wait until my late lunch break (3:30 on this particular day).

Lunch 2: Leftover grilled chicken in salad with blueberries and burrata, my current obsession. Side of Glutino crackers.

IMG_3816

Burrata is sort of similar to fresh mozzarella, but creamier and softer.

Afternoon snack: Granola bar.

IMG_3821

Dinner: I actually got off work early, today, which was perfect given I was making my own soup! Since my soup didn’t have protein, I snacked on leftover mahi mahi with ketchup, and some carrots and hummus while cooking.

IMG_3818

For my main meal, I made a soup based on a lot of leftover ingredients, but also something I’d been wanting to try. This falls into the Quick and Easy category! Homemade soup on the table in 20 minutes? Sign me up!

Note that this is more of a meal idea than a strictly measured recipe!

Miso Noodle Soup

IMG_3822

Ingredients:

Stir fry veggies

Green onions

Miso paste

Soy Sauce

Garlic

Ginger

Chicken or Veggie Broth

Rice Noodles

  1. Saute stir fry veggies in a bit of olive oil, soy sauce, and garlic. On the side, start heating up the broth. *Note: you can just boil the veggies in the broth for faster/easier soup, but I think the flavor is better if you sauté first.IMG_3817
  2. Chop up green onions and add to broth, along with stir fry veggies.
  3. Stir in garlic, ginger, and several tablespoons of miso, to taste.
  4. Add in rice noodles and place at bottom of pot, then simmer for about 10 minutes.

That’s it!

IMG_3820

I enjoyed my soup with a couple of crackers.

IMG_3823

Dessert: I was craving a big bowl of ice cream, so that’s exactly what I had. I made a bowl with marble banana bread from my freezer stash with salted caramel Halo Top, and whipped cream with sprinkles.

IMG_3824

A little bit later, I wanted something more so I had a couple of Free 2 Eat chocolate chip cookies (allergen free). They’re SO good!

What did you eat today?

17.5, Goats, First Place

Thursday night, Dave Castro announced the workout for the Crossfit Open 17.5, surprising absolutely no one.

That’s right. I think pretty much everyone guessed that 17.5 would be some type of couplet with thrusters and double unders.

Thursday dinner: roasted carrots+spaghetti squash mac n cheese.

IMG_2646 IMG_2647

Friday was a rainy day in these parts. Low key day, but I have to highlight a trip to Costco because one of the free samples was Ghiradelli bunny shaped caramels! So cute!
IMG_2649

Lunch was another Quick and Easy meal I’d like to highlight.

This salad is crazy simple, healthy, and delicious. It’s literally just lettuce with hummus as dressing, goat cheese, and an egg. This is one I’ve packed for lunch countless times, with just a microwaved. Of course, when the egg is perfectly runny and the goat cheese is higher quality, it is taken up a notch.

IMG_2643

Finally…17.5!

17.5 was simple: 10 rounds, 9 thrusters (65# for women), 35 double unders.

I figured the double unders would slow me down. My double unders can be pretty hit or miss based on the day, and they go downhill a lot when my arms get tired!

The other little interesting part for me was that my jumprope has a little wire sticking out the bottom, and if I whip myself a certain way, it cuts me. So sometimes I randomly start bleeding during double unders. Fantastic.

My only real strategy for this was to try and go unbroken on the thrusters for as many rounds as possible, with the goal of getting at least 5 rounds unbroken.

^From our Facebook page.

This workout was definitely a gasser. I was breathing heavy early on, but nothing at least was too crazy heavy. I struggled with double unders early on. I came out the first set of thrusters way too tight, and had a lot of difficulty stringing together sizable sets. After a few rounds though, I started to find a better rhythm. I kept up my unbroken thrusters throughout all 10 rounds. I wasn’t planning on it, but by the time I got to rep 5 or 6 and wanted to put it down, it seemed like more effort to put it down and pick it back up than to just push out a few more reps. Also, I’m very glad it was 9 and not 10. Because I kept for some reason thinking 10 and then being pleasantly surprised to be none at 9.

About halfway through, all I could think was “f*** this.”

I didn’t start really REALLY gasping for air until the last round, but it was a short enough period of time (one round) that I figured, ehh who needs to breathe?

I finished in 19:19 Rx.

After watching and judging some other people, we had an end of the Open party.

IMG_2652

Barbells and beer. Nothing better. Semi-still considering changing this blog’s name, hah!

We have such a great community here, and it was a fun way to celebrate the Open.

IMG_2655

I thought I escaped without too much rope damage, until I was getting ready for bed and saw the tell-tale tiger stripes. Yeah. No blood though!

Saturday morning, I realized why having mostly beer calories for post-workout recovery was maybe not the best idea. I had some food at the party, but no real protein until about 3 hours after the workout. I woke up Saturday sore already!

For breakfast, I had another throwback yogurt bowl: vanilla Greek yogurt, pumpkin bread, sunbutter. This is always a good one.

IMG_2656

Saturday morning, we learned that my sister’s cat had somehow gotten out the previous night, and was missing. We spent a lot of the day Saturday helping out with that (with Chloe as well), to no avail. Thankfully, we got word early Sunday morning that he came home all on his own!

In between this, I spent a few hours driving down to Pescadero with some high school friends to visit a goat dairy! We had the pleasure of petting 5-6 day old babies!

IMG_2657 IMG_2660 IMG_2670

As well as some 1 month year old kids!

IMG_2672IMG_2659

And of course the ladies! We also had the opportunity to sample some really delicious goat cheese. Not only was there chèvre, but also really delicious ricotta and feta.

The drive down the coast is always beautiful!

IMG_2677

We made a quick stop at the beach at Half Moon Bay before heading home.

IMG_2679

Dinner was assembled in no time at all later that evening. We got precooked chicken stuffed with rice and broccoli as well as a kale caesar salad mix at Coscto, which I served with some of my fresh chive goat cheese on toast!

IMG_2680

A little later in the evening, I went back out with the same friends for some wine and a really confusing board game.

I was in bed nice and early Saturday night, so I awoke well before my alarm on Sunday for RACE DAY!

I did the Hellyer 5k, which I’ve done 3 times in the past. Fun fact: when I did this race last year, I had a broken foot. I just didn’t realize it yet. This was one of the early indications that something was wrong. It was also 2 days after Crossfit Open 16.4, which destroyed my lower back and I legitimately could not straighten my body. So I figured I should do better this year!

Once again, Chloe came! She made a friend again, before even leaving the parking lot!

IMG_2682

Obligatory awkward stretching picture:

IMG_0013

Race ready!

IMG_0016

(Also, aren’t my shoes so pretty?? I got them for myself with graduation money, but they didn’t come before I left for my summer internship so now I get to use them!)

IMG_2688

I knew I wasn’t PR trained for this race, so I wasn’t even going to go there. I’ve been putting in some work, but the reality of it is I haven’t run as much as I probably needed to to be there, thanks to lots of travel, plus teaching spin 3 classes a week, plus the Crossfit Open. I decided to just do my best, but race smart. Negative splits, my friends! My original plan was to go for miles at 8:25, 8:15, and then 8:05 for an average of 8:15ish, but pushing the last mile more if I could. IMG_0032

My spectator! She spotted me on the course about halfway through and had a fit!

IMG_0050 IMG_0052

My first 2 miles clocked in at 8:20, which I decided was just about right. Since it was a small race, I also didn’t think there was anyone in my age group ahead of me! During the middle miles (aka the rough part of a race), I thought about one of my training runs. It was really awful. It was 6am in Philadelphia (3am CA time) on a treadmill at the hotel, before I had to board my flight. The whole thing was sluggish and I didn’t enjoy it at all, but I didn’t turn down the speed. It’s the little moments in training you remember when it’s time to dig deep.

I picked up the pace for the last mile plus!

IMG_0072

The race course was changed due to some flooding, so they actually had to lengthen it a little bit. My watch did notify me of my 5k time though!

IMG_2689

And overall:

IMG_2690 IMG_2692

I’m not sure if you can tell in this picture, but we have matching blue ribbons!

IMG_0087

The cherry on top was finding out I got 1st place in my age group! Gotta love these small races!

IMG_0088 IMG_2694

As wild as Chloe was for the race and race festivities? On the drive home?

IMG_2697

After reading last year’s recap, I knew we needed to stop at the local gluten free bakery for brunch. My mom and I split a turkey avocado sandwich on foccaccia.

IMG_2700

As well as a cinnamon roll and a lemon poppyseed loaf. YUM.

IMG_2698 IMG_2699

When we got home, my family and I iced our various ailments. My dad recently pulled a muscle, and I’ve been dealing with a wonky knee lately. I’m not sure if I’ve mentioned this, but my left knee has been sore lately. It doesn’t seem like activity I do hurts it, but it hurts when I bend it a certain way, off and on. It started after my long trip to the East Coast, and I think I might have hyperextended it a little bit by slipping on snow. Either way, it’s not a big issue but it get creaky on and off. While icing, we tried a Campfire Stout from Costco, which was basically S’Mores Stout. The verdict? Delicious.

IMG_2703

That’s all for this post, but look out for another quick and easy idea for tomorrow!
