The Weekend and Beyond

Whelp, it’s officially that point in the quarter. Over the past week I’ve had to write a couple of scientific research papers (surprisingly fun and interesting) and just took a midterm today. I finally feel I have some relief! Despite all that, I still had an awesome Valentine’s Day weekend. I’m going to to a sentence per picture recap (pretty sure I’ve never done this before, but why not?). Also—apparently I love experimenting on myself. I think I actually just love the scientific process, but whatever. Anyways, details tomorrow on a new experiment!

Saturday I had a chocolate tasting event with my dorm and then dragged my sister out (with the condition she could wear pajamas); the night included meeting new people, seeing kitties, and a cat ear cleaning #vettech.

The stars aligned for my schedule on Sunday; spin class at my favorite studio then a cupcake pickup, then lunch with some of my high school besties!

I stole GF cornbread from the freezer at home and have been eating it all week with a touch of butter and honey; side of tomato soup with cheddar (the best way to eat tomato soup!)

Little cupcake mishap in the car but cupcakes escaped relatively unscathed; Valentine’s sampler included coconut chocolate, chocolate cream, caramel chocolate, red velvet, chocolate raspberry, and white chocolate passionfruit.

I threw a Valentine’s Day party for my friends on Sunday night and it was awesome; the spread included English cheddar and 1000 day aged gouda from TJ’s, crackers, and cupcakes.

Luna has a new formula and I strongly dislike it, especially the S’mores (the lemon seemed ok and I haven’t tried the others) so I’m trying to stock up!

Whole Foods green smoothie post-80 degree noon Crossfit was perfect and necessary; the workout included lots of back squats which luckily I am getting less sore from each week.

Sometimes I’m so classy I can’t handle myself. Breakfast was yogurt in a jar because I had a jar to use and we were out of bowls. Lunch in a can because I didn’t have anything else to store it in.

I tried this for the first time and like it better than the other flavors. It’s growing on me but needs some salt; better alone because it’s a milder flavor overpowered by yogurt! I’m still partial to my farmer’s market gourmet sun butters though.

The Grad School of Business arguable has the best food on campus, and I had some awesome chicken mushroom chowder. Also exciting, but right before lunch I successfully gave a mouse an IV injection!

I like Italian food way better without pasta I’m learning. Tons os delicious homemade sauce over greens, with plenty of cheese. I added a meatball after the picture.

New favorite way to eat bananas: once they get speckled I won’t eat them plain, but they’re awesome microwaved and served with a pool of chocolate butterscotch sunbutter! Eaten post semi-soggy run. I hit my paces at least!

The Best, Ugliest Green Smoothie Ever

Today was another warm one here on the West Coast! For most of the day, the heat really didn’t bother me. But now…

Let’s start from the top. I’m being a good person and going to yoga again! I went again this morning after spin (spin is necessary prior to morning yoga or else I’m insanely stiff). I can already feel myself loosening up, thank goodness! My hips were super tight, so we focused on those today. I was the only one in the class-surprise, surprise, 8am fitness classes aren’t super popular with college students. It is really nice to have the personal attention! I want to go to that class as much as possible-I think it’s really going to help my tendonitis.

I was glad I snacked on a granola bar (KIND great grains) before my workout because I was pretty hungry by the end!

For breakfast, I finished up the last of my berries with plain greek yogurt and sunflower seed butter, plus a mango and another granola bar on the side.

I only had one class today, but I had a busy afternoon! Lunch was a quick one-scrambled eggs with manchego and a sour grapefruit!

After lunch, I ran out to embark on the first of many errands. Stop 1-a party store for a tutu for Bay to Breakers on Sunday! I also got some fun socks and face paint! I’m ready! (minus the whole distance running thing. Ehh race clothing is clearly more important.)

From there, I went straight to the allergist. At my last appointment, they tested for food allergies. This time, they tested environmental allergies. The verdict? Welp, I’m allergic to basically everything. Severe to pretty much all the trees and pollen they tested for, as well as pretty severe for dogs, somewhat for cats, and super strong for dust mites. Sooo there’s that. There’s not a lot I can do about it for now, but most of the time I don’t have terrible reactions to things and it’s ok. But let’s just say they had to give me allergy medication after doing the dest because my skin was reacting so severely!

After the appointment, I raced back to school for softball practice. There wasn’t a huge turnout, but I got to play catch and shake out my arm, which was nice. We ended in time for me to rush to the earlier Crossfit for a strength day (no WOD). One of the movements we did was weighted planks-doing a plank with a weight plate on your back. I absolutely love this. I used to do them with my trainer way back then, and I loved them so much I did them on my own a lot. Well, my core strength is about half of what it once was! Hah!

I ended up missing dining because there was a special dinner thing going on that ended earlier, so I went to Whole Foods. I’m trying to be more frugal, and I walked out of Whole Foods carrying all my groceries in one hand!

Somewhere between finishing Crossfit and eating dinner, I got pretty dehydrated. I didn’t go back to my room at all in the 8 hours or so I was gone, so I ran out of water at the end of my workout. I figured it wasn’t a huge deal, but by the time I was walking around Whole Foods, I was deliriously thirsty so I grabbed everything as fast as possible! I got a green smoothie-technically. They were out of mango, so I substituted blueberries, turning my smoothie a lovely shade of brown. I seriously could not have cared less how it looked. Or how it tasted for that matter-as long as it was cold and liquid, it was the best thing in the world. I CHUGGED that smoothie!

On the side, I has cornbread and tortilla soup.

I’m still feeling sort of tired/thirsty/out of it-it’s so hard to cool down! I’ve been chugging water all evening, so hopefully I’ll perk up!

Happy Friday everybody! 

I can’t believe I only have 3 days left of classes! How crazy is that? What’s on tap for me in these next few week? I have 3 finals, only 1 of which I am actually worried about. My half marathon training continues-more on that in a minute. This weekend I have a sorority fancy dinner, a pledge class planned party, a banquet for my dorm, and sorority initiation. Next weekend I have Kitten Nursery orientation! For those that don’t know, I am volunteering at an animal shelter this summer, and I will be working with kittens-so unbelievably pumped. ImageThrowback to Charlie’s kitten days!

This week I have been in a bit of a food and exercise rut. I’ve missed quite a few workouts due to schoolwork, and I haven’t been feeling that great since schoolwork=not sufficient sleep, plus my allergies have been bothering me. I’ve also had a weird headache, which might be allergy related…it is really stupid though because it is likely that my allergies will improve if I change my air filter….but I have so far been too lazy. Whoops!

As far as workouts go, I got some good stuff in Tuesday. Wednesday was devoted to paper writing and studying. Thursday was morning spin. Today I got in a quick weight lifting workout-nothing too crazy, just to get the blood pumping. So what is the common factor that is missing from my week? That’s right, half marathon training. So far I’ve missed 2 runs, but given that it is midterm/finals season, I’m not too concerned. It is still week 1 and the runs are still short. I want to make one of them up today, but I might do that later tonight after my fancy dinner because I feel like I literally just showered, and don’t particularly care to shower yet again. It is sad that being freshly showered (aka being too clean) has prevented me more than once from doing a workout…

But now on to eats! Yesterday, I went to 4 coffee shops, and spent time working in 3 of them. Don’t worry, I did not get coffee 4 times. Otherwise yesterday’s post would HAVE BEEN LIKE THISSSSSSS.

Here is some deliciousness from the past couple of days:ImageImageSalad with hard boiled egg, garlic hummus, and some type of corn salad. This was surprisingly delicious- I’ll need to recreate it this summer for sure!ImageI made a chicken burger at the dining hall with a piece of grilled chicken and a whole wheat english muffin. I don’t know why I’ve never done this before-it was so good! Plus a vat of ketchup on the side. My side of the dining hall always runs out of ketchup, so I had to run to the other side to grab a bowl of it. Yes, a whole bowl of it. If I was going to that much effort, I didn’t want to run out!ImageYesterday morning I didn’t feel that great (thanks 4+ hours of sleep) so after spin, all my body was craving was a green smoothie. I put a ton of spinach in, and this was still tasty! Spinach, yogurt, peaches, strawberries, banana. I think the key was using water to blend it instead of milk. Sidenote- I topped my egg whites with cream cheese to make them more interesting. However, I first topped them with whipped cream on accident…not feeling that!
IMG_2657 />Yesterday’s cappuccino. I had to share this picture because in taking it, I spilled my drink everywhere. The things I do for you guys!ImageDelicious salad- blue cheese, apples, pears, walnuts. I also realized yesterday that if I want any hope of going to the Healthy Living Summit, I need to stop shelling out so much money on expensive salads and fancy coffee drinks. ImageMore delicious mystery bread. I have absolutely no clue what is in it, but it’s sooo good. I know it at least has sunflower seeds, carrots, and raisins. Not sure what else though. I need to ask sometime! Hey, I’ll take another excuse to go back!

This afternoon has been pretty low key so far. I am expecting a fun and busy weekend though! I have 3 days of classes, and then Dead Day. Yes, one day (welcome to college…), and then finals! Finals are Fri, Sat, Mon, Tues, Weds, but my first isn’t until Monday. Hope everyone has an awesome week!
